Ingredients:
For the Chicken:
1 whole chicken, cut into pieces (or use chicken thighs/drumsticks)
2-3 tablespoons olive oil or ghee
1 large onion, finely chopped
3-4 garlic cloves, minced
2 tomatoes, chopped
2-3 green chilies (optional, for spice)
1 tablespoon tomato paste
Spices:
1 tablespoon Kabsa spice mix (or the following individual spices)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground cloves
1 teaspoon ground turmeric
1 teaspoon ground paprika
2 bay leaves
4-5 whole cloves
3-4 cardamom pods
1 cinnamon stick
1/2 teaspoon ground turmeric
Salt to taste
For the Rice:
2 cups basmati rice, soaked and rinsed
4 cups chicken broth or water
1 large carrot, grated
1/4 cup raisins (optional)
1/4 cup toasted almonds or pine nuts (for garnish)
Fresh coriander, chopped (for garnish)
Steps to Prepare:
1. Sauté the Chicken: In a large pot, heat olive oil or ghee over medium heat. Brown the chicken pieces on all sides, then remove and set aside.
2. Prepare the Base: In the same pot, sauté the onions until soft and golden. Add the garlic, tomatoes, and green chilies, and cook until the tomatoes break down.
3. Add Spices: Stir in the tomato paste, Kabsa spice mix, bay leaves, whole cloves, cardamom pods, and cinnamon stick. Cook for 2-3 minutes.
4. Cook Chicken: Return the chicken to the pot, and add water or chicken broth to cover the chicken. Bring to a boil, then lower the heat and let it simmer for about 30 minutes or until the chicken is fully cooked.
5. Prepare Rice: Once the chicken is cooked, remove the chicken from the pot and set aside. Measure the remaining liquid and add enough broth to make 4 cups.
6. Cook the Rice: Add the rice, grated carrots, raisins (if using), and salt to the pot with the broth. Bring to a boil, then reduce the heat and cover. Let it cook for about 20 minutes until the rice is tender.
7. Roast Chicken: While the rice cooks, you can roast the chicken in the oven for a few minutes to get a golden and crispy skin (optional step).
8. Serve: Fluff the rice and serve it on a large platter. Place the chicken on top and garnish with toasted almonds or pine nuts and chopped coriander.
