Agave is also known as centuary plant. It's example of bulbils. Bulbils are fleshy buds, detaches from plant and fall on soil to develop new plant.

Century plant. I've got a patch here in Australia. They are common enough here, even though we're in a colder state. Mine are growing in hard clay. Probably put there by relatives in the 1920s as other stuff was planted then. They keep self seeding and a small bunch has started about 100 yards away. Some years I get 5 stalks a year. Got 2 bags of seed pods right now

Interesting so 2 questions 1) what is the tool used to cut/shave the plant called? 2)what do you use the leaves for?

It is called coa de jima or coa ("hoe for harvesting", "hoe"). The leaves have sweet juice which can be crushed and pressed for agave nectar sugar. They are fiborous and can be used for rope or weaved into mats.
