Agile Career Paths could be confusing and not as obvious as we'd like in the modern competitive Job Market - at least in Australia, but other countries have similar Agile Job demands and high entry requirements.
Career change is almost always a daunting undertaking, especially when you are relatively new to professional area of your desirable job. Agile Project Management, Delivery, Scrum Mastery, Coaching remain in high demand on job markets around the world - and Australia specifically.
This makes it difficult to enter the job market as a professional with insufficient exposure to Agile, current demands for Agile roles, entry level requirements, and so on...
I'm here to summarize high-level but useful and actionable points to help you on your career pivoting and new Agile job search journey, should you seriously decide to embark on one.

I have a PMP and have a degree and background in engineering, but not software or IT related. I am looking to pivot to product owner and have been studying toward the PSPO, attend Agile Meet-Ups, but have had no luck even landing an interview. I think it's because my resume does not show much software, or even Agile experience since all companies I work for and work with are Waterfall based. What do you suggest for me?

Hey Zach, great question. As i don't know the rest of your particular situation, high-level advice would be - see if there is "closer middle ground" within Agile Delivery and PM space for you to transition to, before leaping towards PSPO. Product Ownership is not an entry-level concept, and a lot of recruiters/companies start "getting it". Majority of PO roles are filled internally, from those who have been working on their product etc for a while - perhaps in different roles. That is because PO is very much based on domain knowledge that someone from the street wouldn't have. So yeah, check if it's easier to rephrase CV towards Agile elements that you've done - if you haven't, try and introduce those into your current team life-cycle, or volunteer/request to shadow an existing SM or PO. Then look for Agile Business Analyst, or Delivery Manager - just to get yourself into the "space". Then think further. Hope it helps.
