I've made these twice now, and they've been delicious, thank you. I also modified this recipe to make AIP carrot cake. I swapped the sweet potatoes for shredded carrots (raw), the carob for diced dates, and used coconut flour instead of cassava four. I then added 1/2 teaspoon of cinnamon. Of course, I also omitted making the brownie frosting (I didn't use a frosting at all). It came out delicious.

In my country I can't find all the ingredientes, so I replaced maple syrup with coconut syrup , and cassava flour with a mix of tapioca starch and green banana flour. It turned out really good. Thank you :)

These brownies look amazing! I'd love to try them BUT I can't stand shredded coconut. Every other form of coconut is fine but those dried coconut flakes - I just can't eat them. Right now, I cannot eat nuts either and tiger nuts cost a fortune here. Is there anything else that I can substitute for the coconut flakes?

Shredded coconut is important in this recipe. You could try by replacing it with tigernut flour.

I have not tried it but you could try using banana flour or coconut flour. I would try banana flour since coconut flour might make it too dry/crumbly.

Yes you could definitely try but use less quantity of coconut flour as coconut flour absorbs a lot of liquid. Do you tolerate tapioca flour? I think someone wrote a comment on my blog saying that they tried the recipe using tapioca flour and it came out great. Good luck!

These are not AIP friendly, you used Vinilla extract which contains Alcohol. Alcohol isn't allowed for AIP

vanilla extract is ok as long as you bake it off. The alcohol evaporates on baking so it is allowed.
