First..... THANKS for taking the time in making this video. Personally though, I prefer having my wings thawed and seasoned with sea salt (both sides) and then put in a quart size zip-lock bag and let marinate for 3-4 days in the fridge, periodically massaging them while inside the bag (once or twice a day while in the fridge). I've found that doing this will better season the meat. For me, I've found that seasoning and cooking only seasons the skin but not the meat. And if I want to have them tossed after cooking in buffalo wing sauce, I might use kosher salt for them to marinate in. I've found that marinating them in regular / sea salt THEN seasoning them again before cooking along with the tossed wing sauce, will have them too salty. Best Bet...... play around with seasonings and sauce to see what YOUR personal preference is. But Again....... THANKS for the GREAT video
