Have leftover mashed potatoes and don't know what to do with them? Make Air Fryer Potato Cakes! These are crispy on the outside and creamy on the in. Hi! So I just now discovered you and I just got an air fryer. My late wife had cystic fibrosis and for 24 years I cooked most everything outside. I have become a very good cook with fire. Im still confused about the air fryer though. But then after seeing this video from two years ago I’m realizing, 1. it’s (little to no oil. Not no oil) and two 2. It does have a burner in it up top and that it’s not so much about (cooking time) as it is about(speed) I was feeling, I think, impatient with it. Yet I could wait 6 hours for amazing ribs from my smoker. As you know most everyone fry’s their potato cakes. I went from Virginia, to Miami, to Tennessee (17) nothing but breaded and fried lol To now SanDiego. I know this was long. I jus wanted to say So I (patiently) made your recipe and they were amazing! This recipe looked so good and easy. But, I had to adapt it, so I thought I would share my adaptation -- I discovered I was out of eggs. I had ranch veggie dip left over from Christmas. So, I added a little water to the dip so it was the consistency of eggs, then dipped the potato cakes in that mixture. I also added crumbled bacon. End result was potato cakes tasting like a crunchy loaded baked potato. Very delicious!

👍🏻👍🏻😊 These look really good. Makes me want to make extra mashed potatoes so I have leftovers and make these little jewels. Do you do real mashed potatoes? Or do you use Idahoan mashed potatoes??? Idahoan potatoes are really good. Never used instant until I tried these. I just add hot water, butter, sour cream or ranch dressing if I feel in the mood!! I buy the big box at Sam’s. These are the original. They have a bunch of flavors but I like the original and add what I’m in the mood for. A friend got me hooked on these. Give them a try and see what you think.
