made these tonight, and followed the recipe exactly as you made it, and it is the best potato cake recipe I have ever had ! Funny thing is, I also had close to 2 1/2 cups of leftover potatoes, so I didn't have to guess at anything. Thanx for this very good recipe and your efforts.

Self-rising flour will give your potato patty a nice slight rise that is very satisfying. I also use dry onion flakes with a few dashes of powdered onion.

Just a thought (I haven't tried it yet), imagine frying some choirizo or smoked sausage in the oil before frying the potato cakes? I bet they would take on that lovely smoky flavour. I'm out of flour and onions right this minute but I'm definitely going to give it a try.

You do not have to measure mashed potatoes for potato patties you just mix them up a little egg flour bread crumb onions cheese whatever you want in there make the Patty and fry it❤ my mom made these for years so I don't need a recipe when you get as old as I am you learn how to finagle the bagel when you're over 50😂

Thank God, she knew to break the egg on a flat surface rather than the edge of the bowl. I cringe every time I see people break an egg on an edge of something because they are getting shells in their eggs - even if they don't see it.

Always. I make sure to cook extra potatoes for leftovers or for another dish. This recipe does seem to have a lot of flour for the amount of potatoes. To each their own.
