Hey folks! I bring to you another Air Still Pro adventure using the Still Spirits Air Still Pro, which I've had loaned from those lovely gents at www.brewathome.shop .
In this film, I'll be turning some horrendous 15% home brew wine into a neutral spirit with the air still pro, before splitting it and flavouring it with juniper berries and then dehydrated apple and dehydrated orange.
The spirit is double distilled in reflux mode using the Air Still Pro, so that I do a stripping run, followed by a spirit run.
The output is a 90% spirit, which I dilute and flavour.
The apple gin, doesn't particularly end up tasting of apple, and if I'm honest, it's a bit harsh, but the orange gin has a decent orange flavour and isn't too bad.
Neither are great to drink neat, but both mix well with lemonade, although they do touch when mixer is added to them.
The film features the whole process from ingredients, through stilling, flavouring, racking, filtering, bottling and tasting. Hope you enjoy the film folks, cheers!

Enjoyed the video as always. Thanks. You asked about a Demijohn funnel. I make my own using the slender necked plastic Schweppes Tonic Water bottles. Shove the tonic bottle into your Demijohn, mark it and cut to exactly where you want it. Perfect fit.

I only macerate for 1 day with the botanicals and flavorings and then put everything in my Air Still. That way you don't lose ABV but you keep the gin flavours and have a clear liquid.

Hello thank you for this wonderful video, if I have air still old one do I should remove the first 50ml then I can continue releasing the abv amount? For your information I’m afraid of methanol which is poisoning material and thanks

Typically the first 50ml is foreshots - the bad stuff, that needs removing. Then you have heads - This can be 200ml or more, this isn't good to drink, and is best recycled in a future distillation. The hearts follows, you want to kep this until the output drops below 25% ABV, after which time you have tails. The heads and the tails can be mixed and diluted to less than 40% ABV then re-run through the still. Good luck!

Sorry to hear yours didn't turned out good. At least you tried. Keep it up, don't give up! I used dried fruit for my brews and it works fine.

I have an Air-Still Pro and have only used it in reflux mode. It does what it is supposed to do. It is an expensive tool. Removing the packing to use it in pot-still mode is a total pain. I would recommend it to anyone new to the hobby that can afford it. For me, filtering is my preferred method of fixing a bad brew. Some of my failures have become weed killer. I take the hobby only so seriously that I can laugh when something goes wrong.

Hi Jean, thanks for the comment, may I ask what type of filter you are using? I've tried the still spirits charcoal ones over and over but they don't seem to make an awful lot of difference. Cheers!

Like you I started with the old air still, and ended up getting the pro too. Also like you, having both I wouldn't run the air still pro in pot still mode. That being said I still used the old pot still a lot. It's perfect for running hard and getting a lower abv like you need for gin. With the pot still a lot of the flavour will still come through. As a lot more of the original liquid comes through. I tend to stop collecting when the output drops below 30% then dilute as needed. You can run what's left over through the air still pro again if it's worth it. P.s. I do enjoy watching your films, always nice variation. 👍

Hi Adrian, thanks for the comment. I'm no expert, but just documenting as I go along. Do you run through pot still in the air still and then follow this with reflux in the pro? Glad you like the films, got a few different ones coming up!
