Lots of reasons to spray at night. Usually little or no wind to create a drift hazard. Some harmful insects come out at night while beneficials like bees go dormant. Don't want to harm bees. That aircraft has special light package for night spraying. Notice how he turns them off while turning so he won't blind himself because of night moisture in the air (fog). That pilot is both brave and skilled. You MUST know your surrounds and field layout to spray at night.

Great video, but as a pilot,,,, No freaking way! As the saying goes,,,, There are old pilots and bold pilots, BUT there are NO OLD bold pilots”!
