As a person living in Hungary: meat pancakes is made with grounded stew. Basically they make a stew, ground it, and that's the filling. So it can be done with different kinds of meat. Generally it's made out of pork stew.

Rat? Rat is expensive! The named meat always is! "Moving his hands carefully, Dibbler opened the special section of his tray, the high-class one that contained sausages whose contents were 1) meat, 2) from a known four-footed creature, 3) probably land-dwelling."

Ayoade does the same thing in every restaurant. It’s part of the character he plays. Hungarians, don’t take it personally. Remember the restaurant knew they were coming with a film crew, so they had to play along (quite literally, in this case). Making fun of the menu is all part of the program. It’s what makes the British audience tune in. Most of them would have asked for a bottle of brown sauce to go with those delicious dishes.
