Hi Deena, really amazing recipes and very helpful for people like us who stay away from home. Oru chinna request - if you could ask the elders the side dish (poriyal) that go along with the food they prepare that will be amazing. I have heard elders at home say what poriyal, vethal, vadam goes well with certain kuzhambu ,kootu, sambar so if you could ask the same to these caterers/chefs it will be really useful to taste the food with the right side dishes :) hope you don't mind, thanks

In the ingredients list you show equal quantity of coriander and chana dal . But while preparing you use two table sp coriander seeds and four table sp kadala paruppu This is not traditional vatha kuzhambu by the way .it looks like Kara kuzhambu

Hello chef it was indeed a nice recipe i have a few doubts kindly suggest me can we add brinjal during the tempering u guys have already mentioned no vegetables it just struck me can we add brinjal instead of vathal ?? Chef can please share Puli sadam indeed they are lots of recipes I'm asking using tamrind pulp can't have puliyogare prepared temple style all the time may be any variation can do .... Too much oil used can b reduced. Even we do vathalkulambu at home but not with this much oil. Over usage

I am not trying to condemn Indians here so don't get me wrong. Indians, generally use too much oil in cooking. There are certain foods need more oil to cook in the early stages but we can always throw away the surplus oil in the food we cook. Too much oil is health high risk. I don't understand why most Thamilians like to add vellam in their food. Normally Thamilans don't add vellam in the original Thamil cooking methods. My mother is from Thanjavur she cooks wonderful food but never add vellam or coconut milk in curries. I find it very strange.
