I do something similar, but I opted to spend the $9.99 for the NDI HX Capture app for our iPads so we just capture the iPad's screen directly. While it does cost money, we no longer need an in-between computer.

Yeah I still have that app when it was free during COVID. That works well for OBS but the original video for the ATEM was my original issue

Good content, but you really need to consider cutting out the middleman PC and purchasing the NDI HX Capture app which allows you to send the NDI feed direct from iPad to OBS. It is a one-time $10 purchase per AppleID. Very low latency. This video shows a free method, but sometimes a $10 purchase is the better option.
