Anyone walking between the bourgeois facades of the Werneckstrasse in Munich's Schwabing district would expect a well-kept Bavarian restaurant behind the name Werneckhof by Geisel. But once inside you will discover a truly unique experience, combining a European and Asian cuisine.
Master of this culinary conviction is Tohru Nakamura, a Munich native with Japanese roots. Together with his team he serves a modern cuisine with influences from national and Asian culinary culture. Tohru is a purist, high-quality products are the most important and the chef puts special touches with lots of different aromas. But the essence always stays the nature of the main ingredient.

This dude treats mushrooms and radishes with as much respect as some of these other chefs treat the rarest caviar. THAT is a hallmark of a great chef.

sometimes i like to shit on some restaurants that put 200 hundred fucking ingredients into a microscopic plate but god damn this would be right up my alley. I wish i could try this so badly. Good work.

Are you supposed to eat it in three bites? The large piece of chutoro and the smaller pieces of otoro? Eat the mushrooms by themselves or combine with the tuna pieces?

I love it but would be happiest with the tuna in it's simplest form and not so much embellishments. Every component looks outstanding nonetheless. Would I pay top dollar for this? Absolutely.

In my opinion you may be correct. Shitake often taste of urine and I don't mean to insult. Shitake are inexpensive, everyday mushrooms and while I appreciate these may be special from the cultivator, they're still just shitake. I avoid using them post 1990 when I discovered (what I consider) better mushroom products.
