Semolina is so delicious.. and half the world use it baked for dessert then splash it with syrup. Such a lovely dessert with least complication if any. I made the Indian version cake and tried it with cocoa and then again with coconut 😘👌🏻. Tastier than regular tea cake.

This is the first time I've seen this made the way my theas made it. The only suggestion I would make is let it set for longer, and while it's sitting, tilt the pan in all 4 directions so the syrup can get into the edge pieces. You can also use orange rind instead of lemon.

I use only thick semolina because I like my ravani crumbly. Also my version has a good amount of coconut flakes in it cause I like coconut. Coconut ravani is popular in itself in Greece but I am sure its not authentic. But who cares! :P The perfect dessert to eat alongside with a cup of greek/turkish coffee!

I use some orange zest or orange flavoring in ravani. Mastiha is used in another delicious syrupy sponge cake called samali. I hope my suggestion is helpful.

Thanks for the recipe, looks amazing, I'll surely try it! Can you please make some Galaktobureko as well? I've followed a recipe on youtube but it was all in Greek and some of the ingredients were not listed in the description. It turned out fantastic, but the taste was slightly different than what I usually eat at my fave Greek restaurant. On top of that, the Greek restaurant serves it hot with a ball of icecream next to it but in Greece I ate it cold. What's the way to serve it?

we also have a dessert like this but in Nicaragua we called it borracho (drunk) cuz the syrup has some rum in it and has a thin layer of custard on top that also has more rum. 😎😎😎
