Semolina in Hindi is called Rava. The moment I saw this Ravani by Akis pop up, I had to watch it.

Semolina is so delicious.. and half the world use it baked for dessert then splash it with syrup. Such a lovely dessert with least complication if any. I made the Indian version cake and tried it with cocoa and then again with coconut 😘👌🏻. Tastier than regular tea cake.

This is the first time I've seen this made the way my theas made it. The only suggestion I would make is let it set for longer, and while it's sitting, tilt the pan in all 4 directions so the syrup can get into the edge pieces. You can also use orange rind instead of lemon.

I use only thick semolina because I like my ravani crumbly. Also my version has a good amount of coconut flakes in it cause I like coconut. Coconut ravani is popular in itself in Greece but I am sure its not authentic. But who cares! :P The perfect dessert to eat alongside with a cup of greek/turkish coffee!

I use some orange zest or orange flavoring in ravani. Mastiha is used in another delicious syrupy sponge cake called samali. I hope my suggestion is helpful.

Mastic (or mastiha) is a resin obtained from the mastic tree , primarily found on the Greek island of Chios.

Huh never tried a wet cake before but I do like citrus dessert. Quick question, can I soak the cake with syrup and leave in the fridge overnight? Or would that be too wet?

With this amount of syrup you will have the perfect result. So it will be ok.

Harissa is Egyptian. Christian and Muslim Egyptians in the Fatimid, Umayyad, and Abbasid eras used to participate in celebrations by sharing harissa and dumplings (lokmat al-qadhi), and the recipe in the video is not harissa. 😒😒

Thanks for the recipe, looks amazing, I'll surely try it! Can you please make some Galaktobureko as well? I've followed a recipe on youtube but it was all in Greek and some of the ingredients were not listed in the description. It turned out fantastic, but the taste was slightly different than what I usually eat at my fave Greek restaurant. On top of that, the Greek restaurant serves it hot with a ball of icecream next to it but in Greece I ate it cold. What's the way to serve it?

we also have a dessert like this but in Nicaragua we called it borracho (drunk) cuz the syrup has some rum in it and has a thin layer of custard on top that also has more rum. 😎😎😎

saw a recipe... difference is that in the cake you do not use semolina but corn flour... seems very interesting though :-)

+Akis Kitchen yes it is and it's quite delicious. borracho it's a common way of calling it but it's also called "pio quinto". you should try making it. we like to used our famous aged rum "Ron Flor de Caña"

Akis, how are you? Just a quick question. I wanna know if I can exchange the lemon for oranges. I ask because I see you have two different recipes of Ravani, this one on KZbin and another one on your website. The other one uses oranges but it also uses yogurt and brandy. Hey Akis. I know this is old but I wanted to make revani tonight and your recipe is different than the one I had. It was with orange juice in the wet ingredients. I want to try yours. Is the mastic able to be substituted? If it's very important I can find it tomorrow.

It's like the arabic semolina cake recepie called BASBOUSA, BASBOUSA is easier and you have all most the same result

not really; I've eaten both many times - the Greek cake is lighter, has a finer semolina and mastic gives it a distinct flavour profile.
