Akki roti & Milagai chutney
Portions serving: 4-5 pax
Preparation time: 05 min
Cooking time: 50 min
Calories per portion: 153 cal
Ingredients:
For akki roti:
Rice flour 1 ½ cup
Water 1 ½ cup
Salt 1 tsp
Green chilli paste 2 tsp
Jeera 1 tsp
Black pepper ¼ tsp
Fresh coconut ¼ cup
Carrot grated ½ cup
Onion chopped ¼ cup
Coriander chopped 1 tbsp
Dil chopped 1 tsp
Banana leaf
Sesame seeds 1 tbsp
For milagai chutney:
Oil 1 tbsp
Byadgi chilli ½ cup
Guntur chilli ½ cup
Madras shallow ¼ cup
Garlic cloves 15 pcs
Tamarind 1 tbsp
Jaggery 1 tbsp
Water as required
Oil 1 tbsp
Mustard seeds 1 tsp
Curry leaves 9-10 pcs
Salt ½ tbsp
Method:
Akki Roti:
1. Prepare Rice Flour Mixture:
- Boil water in a pan and add salt and green chilli paste.
- In a bowl, mix rice flour with cumin seeds and crushed black pepper.
2. Combine Ingredients:
- Pour the boiled water mixture into the rice flour and mix quickly to avoid lumps.
- Add freshly grated coconut, grated carrot, finely chopped onion, chopped coriander, and di/shepu (dill). Mix well.
3. Knead Dough:
- Knead the dough until all ingredients are evenly distributed. Add oil to help the dough come together.
- Let the dough rest for 5-7 minutes.
4. Prepare Banana Leaf:
- Grease a banana leaf lightly with oil.
5. Shape and Cook Roti:
- Take a small ball of dough and flatten it into a round roti on the banana leaf.
- Sprinkle sesame seeds on top for extra texture.
- Cook on a hot pan until crispy and golden brown on both sides.
Milagai Chutney:
1. Prepare Chutney Base:
- Heat oil in a pan.
- Add Byadgi Chilli, Guntur Chilli, Madras Shallots, and garlic cloves. Cook until shallots are translucent.
2. Add Sour and Sweet Elements:
- Add tamarind and jaggery for sour and sweet taste.
- Make a paste by adding water as needed.
3. Final Tempering:
- Heat oil in a separate pan.
- Add mustard seeds and curry leaves.
- Add the prepared chutney paste and cook until thickened.
- Season with salt to taste.
4. Serve:
- Once the chutney reaches a boil, remove from heat and let it cool before serving.
- Serve the hot Akki Roti with the flavorful Milagai Chutney on the side.

Chopra ji, Please do not try to do south Indian dishes in your Akki roti pepper is not used only green chilli is used. and in the chutney guntur is not used generally it is used only in Andra and in karnataka Byadgi is used but also used in a range of 60:40 Byadgi 60 and guntur 40 but in Andhra 100 percent guntur is used. Chopra ji you are best with North Indian dishes

There are five different states and a union territory in the South of India, please stop clubbing them always as South India. This is a habit of most North Indians

Same food across states have been slightly modified always to give it a unique touch. But does that make a different version in a different state invalid? Do you care which version of rajma chawal you're having?
