Akki roti & Milagai chutney
Portions serving: 4-5 pax

Ingredients:
For akki roti:
Rice flour 1 ½ cup
Water 1 ½ cup
Salt 1 tsp
Green chilli paste 2 tsp
Jeera 1 tsp
Black pepper ¼ tsp
Fresh coconut ¼ cup
Carrot grated ½ cup
Onion chopped ¼ cup
Coriander chopped 1 tbsp
Dil chopped 1 tsp
Banana leaf
Sesame seeds 1 tbsp
For milagai chutney:
Oil 1 tbsp
Byadgi chilli ½ cup
Guntur chilli ½ cup
Madras shallow ¼ cup
Garlic cloves 15 pcs
Tamarind 1 tbsp
Jaggery 1 tbsp
Water as required
Oil 1 tbsp
Mustard seeds 1 tsp
Curry leaves 9-10 pcs
Salt ½ tbsp
Method:
Akki Roti:
1. Prepare Rice Flour Mixture:
- Boil water in a pan and add salt and green chilli paste.
- In a bowl, mix rice flour with cumin seeds and crushed black pepper.
2. Combine Ingredients:
- Pour the boiled water mixture into the rice flour and mix quickly to avoid lumps.
- Add freshly grated coconut, grated carrot, finely chopped onion, chopped coriander, and di/shepu (dill). Mix well.
3. Knead Dough:
- Knead the dough until all ingredients are evenly distributed. Add oil to help the dough come together.
- Let the dough rest for 5-7 minutes.
4. Prepare Banana Leaf:
- Grease a banana leaf lightly with oil.
5. Shape and Cook Roti:
- Take a small ball of dough and flatten it into a round roti on the banana leaf.
- Sprinkle sesame seeds on top for extra texture.
- Cook on a hot pan until crispy and golden brown on both sides.
Milagai Chutney:
1. Prepare Chutney Base:
- Heat oil in a pan.
- Add Byadgi Chilli, Guntur Chilli, Madras Shallots, and garlic cloves. Cook until shallots are translucent.
2. Add Sour and Sweet Elements:
- Add tamarind and jaggery for sour and sweet taste.
- Make a paste by adding water as needed.
3. Final Tempering:
- Heat oil in a separate pan.
- Add mustard seeds and curry leaves.
- Add the prepared chutney paste and cook until thickened.
- Season with salt to taste.
4. Serve:
- Once the chutney reaches a boil, remove from heat and let it cool before serving.
- Serve the hot Akki Roti with the flavorful Milagai Chutney on the side.
