Coming into our coldest month at the cabin we make it a priority to install a floor vent and fan to circulate warm air into the crawlspace. Stocking wood, exercising the pups and other various tasks fill the short daylight hours. We celebrate the winter solstice with a savory French stew slowly cooked on the wood stove and homemade blueberry mead.

I’ve seen so many comments of the same nature over the years and it seems so trite but I really and truly hope you both know how deeply we appreciate your storytelling, your videography and editing, your commitment to showing all of the majesty and all of the effort that goes into making your homesteads what they are/have been! I suggest doing volunteer work your local non profits. It feels good to do good plus everybody knows somebody who is single. Its a safe and fun way to meet good hearted people.

@p.t.anderson1593 -- I feel the same, these guys are some of my favorite people - I wish them well in such a beautiful yet harsh environment, but that said - that's what life is all about, we all love a challenge, beyond that - what's the point? :D , Eric (Basically a modern day Viking at heart) and his Loving love of this world, his wife (A). I've made stew for years being from down South, and this is the first I've heard of Bourguignon. Now a Guinness stew, I've made - but this sounds fabulous, because a good Pinot Noir (Recommend the Robert Mondavi) wine/Burgundy, has always savored my taste. -- Be well, my friends!

My Mother passed way in April. She loved watching you two on your adventures in Alaska. Your videos are so calming and restful and your relationship is so sweet and wholesome. Watching you two now reminds me of her. You would have liked my Mom. She was as kind and as sweet a human as ever there was. This is the best community on the ‘Tubes. Thank you guys so much. 3 years ago on Dec 11th, my mama passed away, and she was my true bestie. A month later, my longest childhood friend was murdered, along with two of her children. A year later, I lost my Mema. I have no one else left, but you guys are my fill-in family, and I’m thankful for that. 2024 has to be better, right?

Nice to see that everyone is okay. I heard about the tragedy at Eagle River. I immediately thought of Eric and Arielle. You are just the type of folks who would jump into a frozen river to rescue your dogs, despite the risk. Condolences to the family in Eagle River who lost their Mom and their dogs.

I read the sunrise/sunset times and wanted to cry. I was going to ask if you guys suffer from the winter blues with all the darkness. But I imagine it helps to always be so busy with all the tasks you have to do just to keep life operating smoothly. The cheese and those egg muffin things looked SO good. I love the roosters. The broom attachment is genius! The thing I've noticed about the extension ones is you need a little more weight in the center to "dig into" the snow. Without it the head just sits on the top mostly. I've attached a small weight to the center of mine to sink into the snow. The more snow, the heavier the weight. Once the snow gets over 2 feet you just have to do it in segments, if you can't get up on the roof and shovel. Just a tip from the top of a mountain in northern Vermont. 😊 Happy New Year!🎉

You’ll probably never see this comment . . . but my bride and I use rutabagas in our beef stew (and vegetable soup) instead of potatoes . . . I have no clue how it would be in the beef bourguignon . . . but just thought I’d share that family treat with you. I’ve followed you for years and have never commented . . . Just know, you reach more folks than you can imagine. Thanks for sharing your lives with us . . . as many of us will never get to see this wonderful state of ours except through your eyes. Watching now. So happy for another video. I would like to suggest that this summer you closed cell spray foam the crawl space walls, dirt floor and underside of the floor. Create an insulated pocket. Helps with frost and moisture! When you have them out to spray the Quonset they could do the under cabin work as well. You guys are awesome. I absolutely love your videos. Thank you so much for them. Especially for the northern lights and all the drone video. Sigh. If I were 30 years younger…..

You two literally made my go to Christmas dinner meal, over the years the protein has varied from beef, venison, bison, elk and caribou, but the results are the same, empty dishes, gravy mopped clean with home made bread. A little more simmer time on the wood burner helps the collagen in the meat break down. Kudos, keep living the life!

When we first started watching this channel years ago, the first episodes we watched didn't ever say their names. Once we figured out Ariel's, my family and I joked that his name was Eric. Once she said his name, we were like, "WHAT?! NO WAY?!" LOL!

What a perfect way to end 2023, with my favorite two Alaskans! We had a "fruit room" when I was a kid, it held all of our canning, produce from the garden, fruit from the garden. Dad insulated it with sawdust. It was wonderful. Great to see the chickens, the babies are all grown and so beautiful. Mead is a sweet wine and it can be potent! Beouf Bourguignon, to use the fancy, hold your pinky finger up, name is delicious. I graduated from the LCC Culinary school, I always used a good quality wine, not expensive, just a good wine. I used pearl onions instead of shallots, but I bet yours imparted more flavor, I'll try it next time, thanks for the tip! Happy New Year🎉🎉 ❤ To you all! See yah next year! Lori from Oregon.

Bourguignon looked yummy. Just a tip, whenever you cook with wine, you should cook it off. So if you make it again (or anything else with wine), add the wine before you add the stock and let it simmer a few minutes to get rid of the alcohol. Happy New Year!

I usually add maybe a quarter of what you added - that way it’s just a seasoning and won’t overtake the dish

Eric, using the brooms for the snow scraper is a great idea! The problem seems to be the brooms can’t cut down into the snow enough to pull the snow down. I’m wondering if the design could be improved with a squeegee shape in place if the brooms so you can cut into the snow and use downward force to pull it off. Anyway, love seeing the inventions you create for the problems that need to be solved! ❤

I've always thought that two people could seesaw a rope over the roof with some kind of drag in the middle to move the snow. This would give a downforce to the drag, you can do both sides at once, and have minimum material inputs needed. Moving from one valley to the next may take a technique I have not thought through.

I’m sure you’ve thought of this… but a thermostat control for the underfloor fan would give you better control especially when away from house. Love the cheese, cooking and meade making!! I enjoy the videos!!

A little taste of everything- the drone footage, firewood collection, a little project, the McGiver snow “rake”, the hen house, cooking, and last, but not least, the awesome side by side comparisons of the trail cam footage between seasons! HAPPY NEW YEAR ....Enjoy watching every episode ...next visit to Home Depot get a ducting boot the size of grate down to the diameter of fan. No loss of heat going to crawl space. Easier to monitor the temperature in crawl space. Be safe

Another A-1 video🤩 Just what I needed on this very dreary (for me) last day of '23. Our bitterly cold snap just broke... never been so happy to see +11F. Since I'm oldER the minus 23F we've had here (upper Mat Valley) just got to me hard. @19:17 is such a groovy scene in the chicken house. So much good to say about this vid. My refrigerator runs at 37 degrees all the time - no freeze - so that temp in your crawl space isn't too bad. However, in the odd corner there, it might be a lot cooler. Circulating the air can only help. Stills from your drone at altitude may help you design your trail system. Seeing you use the dutch oven/stew pot made me want to urge the use of a pressure cooker. Then I recalled that you DO use pressure cookers in the canning process. In fact, I was going to praise my Ninja Foodi for the same purpose. I resisted getting one of the electric multi-function pressure cookers, thinking it was more gimmick than necessity since I already have a nice pressure cooker. Then I got one as a gift. Resignedly, I decided I had to use it, so I could tell the donor that I had used their gift. I have fallen in love with it! Load it up, set the pressure (hi/lo) and the time, press go and you need not worry about how fast the weight is jiggling, or how much liquid you're losing through steam - it just does it right. I have solar panels (net metering) so I'm very aware of electricity usage, and it's SO much more efficient in that regard than the electric stove, that I can add one more credit to it's list. You use the wood stove, but you're subtracting the BTU's used to cook from those used to heat the cabin, so the heat is not exactly free, although it costs you no electricity. Plus the Foodi does stuff other than pressure cooking. A worthwhile appliance in my situation! BTW, I make a beef stew/New England pot roast a lot, and I use MUCH less wine than you used - to my taste.

Mead made from honey and blueberry with champagne yeast would taste like wine with hints of honey and of course blueberry. Next time, measure starting gravity and when finished fermenting measure final gravity. Then you can calculate aprox. ABV. Adding juice and zest from half a lemon in the brew, would enhance the taste. Happy New Year! 🍾🇳🇴

You have to cook the tomato paste down with the mirepoix ( onions celery & carrots ) before you add the meat and broth to tone down the bitter taste from the paste. Also your missing the cognac which is called for in the original recipe that will lessen the wine taste and elevate the dish and deepen the flavor of the gravy. Not sure if it was planned already, but highly encourage to put a filter on the inlet side of the fan to reduce dust and dirt build-up on the fan and inside the duct for the longevity and reduce cleanings. Cheese cloth at the end of the duct for a secondary filter would be great for the produce stored in the crawl space also. Love seeing the growth and wishing yall well this new year!

If you want to automate the fan, you could get a greenhouse thermostat that will turn the temp on and off for you. We just moved up to Nome and having the shortest day behind us is definitely something to be celebrated.

Good video. Years ago we had to endure a winter in Iowa in our 25' travel trailer with hay bales as insulation around the under-trailer area. I hung a wireless temperature sensor under the floor and was able to monitor the temperature from inside the trailer. That arrangement might allow you to frequently and easily get a quick sense for the crawlspace temperature.

I loved that first bit about the cheese wheel. Reminded me of a few years ago and I'd fallen on hard times. Finally got a job and calebrated my first paycheck by buying a wedge of Manchego cheese, which I ate for supper that night. Have a happy and prosperous 2024!

Love the channel and the relaxing videos that remind me of my childhood in Canada. Would appreciate having the temperatures in Celsius as well! I am always having to convert it each time. Remember, its only the US and a few small Caribbean and Pacific islands that use Fahrenheit :)

My brother and sister in law just moved in Dec. 23 to Willow, AK on to 80 acres that back up to the Nat.l forest. They are having a house built. Maybe they can go fishing with you two someday. Hey guys, Happy New Year!!🎉🎉 The next time you brown meat(hear me out, I promise you) coat the meat in flour and use brown sugar in the pan (trust me). Allow the pan to get hot, I ONLY brown with butter because it adds flavor. Then add the brown sugar and allow it to caramelize then add the REFRIGERATOR ED meat and allow to cook for 45 mins!!❤❤ I PROMISE it will CRISP your meat and no it won't taste sweet.
