that's just time signature - nothing to do with BPM (which is really just speed - you're not as noob as you think :P) so basically the counting is (i think) to show off that they can drop beats in irregular time signatures (assuming 4/4 is the "regular" time signature - if you're confused as to what time signature is, look it up)

That's just Dharni's style of that beat and it's not even really entirely the same beat. Dharni uses a few different sounds to make just a similar beat, but make no mistake that the beat that Alem does at 3:25 to 3:30 IS a Reeps One beat and one of his rather classic ones and also Alem clearly states that one of his big influences is Reeps One.

When they put there finger up to their ear they are saying"listen" as in when reeps does it to monkey he is saying "listen, the sound is not the same" when they tap their fingers they are saying the other person is using 4-4 beat (considered easy) (Reeps vs. Youkai) (Skiller tries to vs. Alem) and the 2 fingers means they are saying the other guy is only using 2 sounds (sounds like more because they are doing it so fast) or the 2 can mean same beat 2 different sounds (Skiller Vs. Reeps)
