This brings me back to my childhood. It was one of my father’s favorite foods after work. He would have a few sausage links along side with a nice piece of Italian bread and a glass of red wine! Oh how I miss those days!

Ciao Bella! I made.. this yesterday ..lol I also make La frittata with zucchini, peppers,and onions… I have a flat dish that was my moms that she used to turn the frittata with .. covers the pan perfectly….I have memories with the onion one mom used to make it to take to the beach in the summer..I’ve used asparagus and also artichoke hearts to make this delicious frittata… I enjoy everything you make cause it’s just like my mom used to make thank you for your wonderful cooking and sharing with the people and bringing healthy Italian food to the people that don’t know this type of food … easy and fast and delicious! Keep those recipes coming ! ❤️

Alesssandra my grand parents came from Ventotene.. and Naples so I’m familiar with your cooking and meals that you make mom was born in Genova but she knew Neapolitan cooking from her mom so she passed down her recipes to me .. actually no measurements lol I watched her make them so I learned them .. unfortunately it’s hard to break the measurements down and I don’t have granddaughters to,pass to but I do have grandsons that I taught a few recipes to.. lol

Love frittatas! Grew up eating them in my Italian family, potatoes and eggs, peppers and egg, sometimes a couple of leftover fried sausages cut up into small slices sometimes not, lol. And the simple tomato salad too. I still make them for a quick easy AND delicious meal. Nice Italian comfort food. My family uses pecorino Romano much more than Parmesan so this was nice to see in your recipe too. Thanks for the mini Italian lessons too, love it!

I’ve been adding lots of it to my egg wash for chicken cutlets and they come out delicious! 💖 it’s crazy how I start a sentence in English middle in italian and end it in napoletano. 😂😂💚🤍♥️

@@alessandrasfoodislove My mom taught me to add the pecorino to the egg wash for chicken cutlets too. I’ve seen so many cooks on KZbin that add it to the breadcrumbs and thought it was just my family that put it in with the egg. I think it taste much better in the wash. My grandmother would start a sentence in English and end up in Italian lol. I wish I had picked up more than a few words but was young when she passed and my mom only spoke Italian with her so I didn’t get the language lesson from her. Love your channel, recipes and how you make everything seem so easy to make.

A flat lid is best but of course I couldn’t find mine for the video lol My nonna would use a light aluminum lid. I remember as if it were today, some things are just sketched in our minds. 💖 thank you so very much!

Love this! ThiSGirL loves comfort and your frittata is just that. I loved your flipping method, I usually use a plate and lots of prayer when I flip and when I miss I’m usually flipping out. Lol. I loved the pan with that groove lid you used. Please share where I can get one, you made the flipping look like a magic trick. Never saw pastel colored eggs either, thanks for sharing where to purchased them. Love watching your channel, I always learn something new like that wonderful salad it’s like I’ve been missing the cherry on my ice cream Sunday.

Dear Jeannie, thank you so much for watching. The frying pan I purchased at Costco and the lid is a glass lid from my pots. Nothing specific just that the size matches. My nonna would use a larger aluminum lid that gave extra space for flipping the frittata. The pastel eggs are from a local farm. The chickens during spring tend to make colored eggs. Amazing Alessandra, I make frittata all the time and never thought of putting a lid on it I usually put in oven and broil the top, but will try your method …..I love the thickness to the frittata and I can see this come from cutting the potatoes in bigger pieces. Thank you bella

I just made this w my roasted potatoes. Also added some smoked provolone and thin sliced hot capicola. VERY GOOD! The flip is a little tricky and I probably cooked it a little too long before I flipped it but it’s still excellent. Would be delicious for any meal. Have you had any success freezing leftovers (if you ever have any)?
