Have you thought about adding curtains on the open sides that open and closed to keep the air flowing, but blocks out the overflow? Just to keep the fire manageable…

That looks great!!! The favorite I do on a disk is the HEB Pork skirt steak, onions, tomatoes, and jalapenos ...seasoning to your liking. I cant wait to try your recipe!!

Always love your vids Al! Got some of your Chimi seasoning and used it for my family's holiday meat dishes I grilled. For the giant dish, I would enjoy seeing some form of paella...that would be intense!

I'm wondering why you don't have a metal cape around the bottom of this thing to block the wind. Especially for something so big it would be useful. Use aluminum foil as a temporary fix until you get it dialed in.

Maybe they wouldn't be considered a "disc" but the chinese make some huge woks that are either cast iron or carbon steel and some of them are definitely bigger than this disc. I'd suggest looking at their content to see how they heat theirs. Shields on 2-3 sides could definitely help with the wind.

yes! I know what you're talking about. Those are huge, same as the paella cookers, they are huge!! but not sure if it's the same concept , the discs are thicker and heavier ... thanks for the reference! I'll check them out

siempre he encontrado que "asado" al disco es una bufonada. Solo es una gran sarten friendo, no es BBQ, no es parrillada, no es grill, por lo tanto no tiene el sabor del carbon ni de la leña. Es solo freir y freir
