Btw the reason he says "My ancient enemy" is because even when the Jabberwock's head is cut off and it is killed, it regenerates and revives itself after about 10 to 20 years. This isn't the first time the Jabberwock has been killed by that blade

Just look in Catholic bible Genesis 3:15. the seed of Eve crushes the head of the serpent. The seed of Eve is Maria, the new Eve that would be obedient to God. She would crush the head of the serpent/dragon and she did. Some people just cannot realize that.

I like to think she just knew she had to land a killing blow on the head specifically, since the poem Hatter tells her earlier in the movie describes her victory as "And with it's head they went galumphing back", it's also what's shown in the Oraculum. If a person is armed they also become a very dangerous threat especially with a sword, shield and armour. Humans are weak compared to other predators sure, but mixed with our intelligence, weapons & our extreme endurance we are definitely one of the more fearsome predators.
