Mr. Marshall Butters, it's a good thing that you tried the original sisig of Aling Lucing because there are other versions of sisig out there, but nothing beats the original. Several years ago, Chef Claude Tayag brought Anthony Bourdain to a carinderia in Pampanga to try some local dishes, among which was sisig. Mr. Bourdain was really impressed by this simple dish consisting of parts that are, most of the time, just thrown away. After that carinderia visit, Mr. Bourdain was invited by Chef Tayag to his house cum restaurant also located in Angeles City. It's a reservation only restaurant that serves a full course for a group of people. It's a must - try for those who want a real traditional culinary experience, that is, without using instant powder ingredients. That photo of Chef Bourdain at Aling Lucing's restaurant was taken during Mr. Bourdain's second visit to the Philippines. Please continue your merry ways of exploring different places and food hubs in the country. Thanks for your jolly vlogs and take care.

Love the way you unhesitatingly always try to interact with the locals. And kudos for offering what you couldn't finish to the kids and bigger praise for not filming it. I've heard of Pampanga's famous Aling Lucing's sisig but this is the first vlog I've watched of the place. Thanks for showing us. I'll keep hollering for a Marshall.

Well done, latik is a by product when you cook the coconut milk/cream until the coconut oil comes out. They cook it until it goes brown and extract the latik and then keep the oil maybe for other uses like for massaging, hair moisturizer, make food shinier and etc. We have to thank chef Gene. Aling Lucing's used to have a branch in Ortigas but it closed down. I didn't know any reasons because it was booming at some point. It was very famous because if you ate there at noon, the smell of the sisig will just be on you for the rest of the day lol, smells like onion. Service was not that nice since they left you with an extra rice. Maybe rush hour.

Latik is coconut` cream boiled until the oil is separated and it turns brownish but not burnt.

oh yes. I told you and you know it. :) back in the 70s and 80s, actors used to frequent that roadside eatery. Dunno if they still do but you should still have seen their walls adorned with a trail of photographic mementos with signatures. I miss that place. Take caution, your BP won't approve but.... Aling Lucing's sisig is one of those things that makes one's proclivity to sinful indulgence, worth it.

Idk why I had goosebumps the whole vlog 😅 These places are basically my whole life, especially college, around that Nepo area. I could go on and on about it, but thank you for visiting my town! Also, it's no shock why it was noisy at Aling Lucings; Kapampangans are known to be very loud even on normal conversations 😆

I attest to that... coming from a person from Rizal with a wife from Pampanga. During my first few months in Pampanga, there are times that I mistakenly thought that my wife's mother and her lola were fighting (I still haven't learned kapampangan during that time) Haha.

Good advice about booking hotels online. Both your good self and an American 'expat blogger' "Philly In the Philippines' are the only ones I subscribe to. Both of you don't talk down to the locals - as many other expat bloggers do. I hope to visit Angeles in April. I've always been very wary about going there because of its 'supposed' reputation. It will be interesting on hearing your opinion about the infamous Walking Street.

Hahaha...I actually love goat meat and for me, the "kalderetang kambing" (some kind of a Spanish goat stew) which I got to eat in a town there in Pampanga has got to be the best kaldereta I ever tasted...Have a great Pampanga food adventure!

Aling Lucing or Lucia Cunanan,80 was stabbed to death with more than 30 stab wounds in 2008. Her 85 year old husband Celestino was charged with parricide The couple were fighting for days before the murder. I'm sure the husband was an expert with the knife in his years in making sisig. The children maintained it's not the father who killed her. Well at least you met one of the grandkids and tasted their sisig. You could just had made sure your dish wasn't made with the dreaded knife.

Glad you made it to Angeles City, Marshall! That quarantine hotel should've been more accommodating and explained to you that since you booked through a third party (Agoda?), you should go through Agoda for a refund. Glad it worked out in the end. Yes, I've heard of Aling Lucing's before but haven't been there...have to make a special trip just for that sisig! Let's go 30K!!

Love tiboktibok if it is pure carabao milk. They are good. Latik is like a curd. It is a by product of cooked coconut milk until the coconut oil separates from the curd which is the latik. Curd is only the apt english word i can think of.

I think I saw a lumpiang ubod or hilaw. Yum. Not so much fan of sisig, but it’s interesting to see how they cook it. Sisig is usually paired with a beer.

The latik is coconut white pulp, grated, then fried until it caramelized if I make sense. You should also try it on kutsinta, sapin-sapin and maja blanca

You're supposed to put soy sauce and calamansi in it, some people also prefer eating it with mayonnaise or egg.

nice. Agoda did refund our booking way back in 2020 when the lockdowns started and it was a no cancellation type booking as it was a promo. so yeah good service in that area at least.

The Nepo mart stalls area you were in upstairs is where some good carinderias are. 65 pesos for two dishes, rice and soup. Many choices.

Had a bit of the same experience at Dunkin Donuts, Dumaguete once before. A fly flew into my 3/4 filled cup of coffee. I told the manager if she could refill me a new one. She said "No." So I e - mailed DD Headquarters in the States. And, when I revisited that DD branch, the manager apologized to me ..... and gave me a free one - dozen box of Donuts! Well, waddayouknow?!!!

@@nilobeebee While it is true that Aling Lucing’s sisig is famous locally but Sisig became more famous to the foreigners and sort of internationally due to Anthony Bourdain. Give credit where it is due. I never had sisig in my life never heard of before as it became famous nationally in the 80’s?

@komentarista basahin mo sinulat ko sabi ko sikat na ang sisig ni aling lucing sa local at national level maybe noong 1980 kasi nagstart sila 1974. Sikat lang si Lucing sa sisig. Pero pinasikat ni Anthony Bourdain sa foreigners at sa mundo. Tagalog na yan baka hindi mo pa maintindihan. Excuse you ang hina nang comprehension mo.

@@arnieljovero1008 Ni hindi naman sumikat ang sisig sa international market eh. Mga fanboys lang ni Bourdain nakakaalam kung ano ang sisig but they don't specifically look out for it. I don't think Bourdain made any converts to sisig, awareness probably, but no one's going nuts over it except for us Pinoys. Not even the Amboys like sisig.
