My grandma makes the best homemade ice cream and now that I have 2 dairy goats I'm hoping she can make goat ice cream for me. I have never had it before but my grandparents swear its the best ice cream they've ever had.

AS far as cheese goes I make Chev're from three gallons of milk at a time. I get 12 eight ounce containers. I make these flavors: plain , Garlic /pepper , Ranch , Taco , Bacon Ranch, ....these are my top sellers. But I also make Dill/garlic , Italian , Pizza , Olive oil with basil and sun dried tomatoes. The plain sells very well because people love to experiment on their own. Once people get past the fact all this yumminess this comes from a goat , they love it! I currently milk five goats , My beautiful Nubian queens. Because they were crossed with ND they have an incredible butter fat content and sweetness to the milk. For the cheese I use a Mesophilic culture and animal rennet and get great results (must add salt ...I use pink Himalayan since it is better for you .....yes I was into it before it became cool) , as I choose I can make the cheese either crumbly or creamy ...or even pressed . I tried the lemon juice method back when I was a total green horn , it turned out from time to time but was not inconsistent . I one day hope to do the aged cheeses....that would be awesome!

I make cheese logs. One lemon juiced/strained ....to one quart goat milk Heat milk to 180o , add lemon juice....stir strain through cheese cloth...,..,drain to desired texture( less time more creamy)..... season ....I then turn it out on cling wrap , shape in to log ...put it in fridge. I like to let it set up a couple days. Then it slices beautifully.

Goats milk yields very good amount of mozzarella cheese 😁Rennet cheese is great too which my husband eats the most.I bake my own sourdough rolls and Chevre with honey on crusty rolls...😋yum~~Well, I still can get enough cream to make butter and ice cream...I'm still stick with store bought cream just because we make a LOT of ice cream...I know, shame on me. I thought of you a few days ago when they talked about the drought on the news here in NY, there was in a special on prime time where they talked about how expensive hay is and how alot of farmers are selling their animals because they can't afford to feel them. It made me super sad. I get a farmshare not just because it's cost effective but I feel good knowing i'm supportive the farmers on the ground level. I hope you find a solution for the hay sooner than later

Your videos and channel inspired many things on our 1 yr old homestead. We believe we will be getting a dairy goat in milk next year. We tried a commercial goat's milk cheese and I was horrified to find it tasted like the smell of our buck! I keep imagining your cheese to be amazing. So, can you describe it to me as compared to your own cheeses and cow's milk products? This is something we really want to do.

Marti is only 4 this year - not old at all for a goat. She should be milking well until she gets near ten-ish. I am strongly considering giving her a year off though. Her triplets this year took so much out of her and she's been bred every year of her life so far. She was a milking yearling when I got her, so she was started young. And she's been such a great doe for us, I think she deserves / needs a break from pregnancy. I'd like to see how her production holds milking "though" too.

Greetings from NC! Oh how I want milking goats. I'm alergic to cow and have been struggling with it because of the cost of alternatives. We have so much kudzu goats will never lack food! Maybe by next summer we will have the money to get goats. The rabbits are doing great and will be a wonderful addition to our freezer. Keep cookin'

Goat milk rocks! (Horse milk, too.) Great yogurt homemade, and ... yes ... I sell antique very pretty butter churns from here in France! Of course they still work and it's good punishment for naughty family, hee hee! Goat cheese, chèvre, is wonderful. I used to pay a fortune for that in NY and here it is so prized! We have a goat farm near us with a vending machine for goat products ... I call it goat-a-matic! And it's fun to see the free range goats outside Paris! Uprated. Wonderful.

Great job Michigansnowpony! I love to make chevre with garic and italian herbs...and sell it on the black market LOL. I like making frozen yogurt instead of ice cream because it has a thicker, creamier texture. Mozzarella is easy, too...and ricotta. Until i saw a cheese video by ricki Caroll I didnt realize what my cheese was supposed to do in the process, so yes I think a cheese video would help alot of folks getting started. A big hit at a potluck was goat summer sausage with goat cheese.

No, goats are expensive to raise, especially if you have land to pasture them on. (Goats are actually browsers like deer, but they will graze grass, etc. if nothing else is available to them). One thing about goats though -- they are notorious hay wasters so you sometimes have to get creative in order to keep them from trashing much of their hay. You also have to remember, with dairy animals, what you put in largely determines what you get out.

Canning milk is canning milk. So if you find a video on how to can cow's milk, it would be the same for goat's milk. In the recipe book I show and used in my cheese making vids, (Goats Produce II by Mary Jane Toth), she DOES discuss how to can goat's milk using both a pressure and water bath canner. I like low-tech, that's why no blender in making my butter. I do have a hand-cranked blender though, now that you mention it. . . Hmmm.

No, not yet. I lost all my bees this year, so the "urge / push / "need" to switch over to honey got lost too. : ) I hope to start over with two hives next year, then maybe that will renew my interest in cooking with honey.

I don't personally can any dairy products, but lots of other youtubers do. I also haven't tried making cottage cheese yet, but coincidentally just watched a video by Misty Prepper on it and I think I'm going to try her method. Never made sour cream . . yet. I believe you need starter for that.

Most people -- when I can get them to try it-- are astonished to discover my goat's milk doesn't taste any different from cow's milk. Goat's milk IS naturally homogenized, so may taste rich or "thick" to folks used to skim or 2%. As for reacting to goat's milk -- many people who can't handle cow's milk (lactose intolerant, etc.) CAN drink goat's milk without problem. I'm in love with the stuff. : )

A great way to make cream cheese is to take your yogurt and hang it to drain in a clean t shirt or pillow case for a about 12 hours to one day.

"They" are not sure why, but goat milk seems to help in preventing type 2 diabetes. Wow, did we ever love Amish goat milk fudge in Ohio! This is a super digestible milk even most lactose intolerant people can enjoy in moderation, but if you have phlegm, gotta limit dairy. I really look forward to seeing your further cheese efforts. My sig' other and I have been discussing have a couple of dairy goats... the problem is we have no self control when it comes to soft goat cheese. It doesn't make it a day in our house and I assume this fresh goat cheese taste even better then store bought so there would be no hope for us!!! Great video though, thanks for all the info.

This was a really neat video to watch, especially for those of who are lactose tolerant. Without goat's milk and feta cheese, I could never enjoy any type milk, other than soy. Know with your older alphine doe, who I think you have had for three or four years, can you milk her on and off for the rest of her life. Or will the next year or two, retire her permanently to be for life a companion of any future daughter/granddaughter goats that you will milk of her line ? I figure you won't be eating

Hi, I don't know if you remember me from several months ago when we discussed the rather sticky issue of pasteurization. I was just thinking the other day about that very issue, and how you and the fam really don't care for the raw variety. I wonder if you could get the best of both worlds by using a small amount of the raw milk that you get every day (say about 1/2 cup) as a health drink/tonic/medicine. That way, it wouldn't taste nearly as bad as some medicines, and you can still use the bulk just as you have been. Just a thought that I came up with in the middle of the night. I know..........I really need to get out more!!! ;-) tootles, Della :-)

Do you ever can your excess goat's milk for use while your girls are dry? I can all I'm able every summer to see me thru the months my girls are dry. Tastes like evaporated milk but is far better than dry milk or 'store' milk for any cooking or baking!

No, I don't can anything dairy. BUT, I have frozen extra milk before. That said, I have nearly always managed to have at least one goat in milk all year round, so being "milk-less" hasn't been an issue -- yet. : ).

I pasteurize my milk on the stove which doesn't boil it, but heats it to 165 F. I don't think this is necessary though, as I've heard of people making butter from fresh, unpasteurized milk.

Do you mean dehydrate the milk itself? No, I wouldn't think so. Dehydrating temperatures have to be low enough so as to dry and not actually cook the food and I'm afraid you'd wind up incubating not so nice "things" in a milk product at those temps.

Well, that depends on the individual goat, milking practices, feed, age, and probably several other factors I'm forgetting. You can dry a doe off anytime during a lactation, or, with some goats, extend that lactation indefinitely. Most people breed their does every year and either milk until a few months before their goat kids again, or dry their does off late Fall so they don't have to milk in the cold months (wussies LOL!). OR: Some folks breed their goats only sporadically and just keep milking them in between rather than breeding every year. Personally, I like to breed every other year and milk my doe(s) right on through into the 2nd year (drying them off 2 months before kidding). Yes, the quantity of milk does tend to taper off as time goes on, but that means you can cut back to milking only once a day (which is convenient). However, I've found the tapering-off tends to stabilize at anywhere from 1/2 to a full gallon -- depending on the goat-- and stay there for a long period of time before dropping off again. That said, there are does out there who are like energizer bunnies and as long as they are fed well, will just keep going and going giving a decent amount of milk.

Sorry for the typo; I meant "whey" instead of "way". For all recipes calling for water, I put instead whey. It doens't make much difference to the taste but I know it's got protein, which is a nice nutritious quality to my bread. Actually, I will probably try goat milk instead. Cow milk has more fat and could disturb the recipe; but it is worth trying. For soups, same thing; Again, whey is a healthy ingredient, probably healthier than the commercial broth that is sold at the store... :) :)

I will probably have to watch my own videos to refresh my memory as to how to do it. LOL. So, I am not a "pro" by any means, especially these days. However, there are many skilled cheese makers on youtube than I who also make cheese on a consistant basis -- perhaps contact one of them? I am freezing my goat milk as I get it. Can I still separate the cream after milk has been frozen? Can I still use the cream for butter, ice cream etc and can I use the frozen milk for soap? Thanks, Cheers!!

Joshua Smith Hi Joshua. Well, I've frozen my milk before, but have never tried separating out cream from it. You'll just have to experiment. As for the using the frozen milk for soap: That's EXACTLY how you will make goat's milk soap. You freeze the milk you need for your recipe because that will keep the lye from cooking it when they come together. Otherwise, instead of that nice, creamy-white goat's milk soap everyone expects, you'll get some tannish/brown bars. : ) (Been there, done that).
