Loved it!This is the only cheesemaking video I found where the curds don't get cut into pieces, but rather moved gently to the cheese cloth.I saw many videos about making traditional italian cheese(I'm italian)and in all of them they cut the curds,however I don't understand why they do it.When you break the curds you'll have a less pure whey and consenquently less cheese.Of course you can make ricotta with the cloudy whey,but you'll have to bring it to a boil and the final product won't be raw

Předně díky, za všechna videa co děláte. Už jsem se z nich dost naučil a jsem rád, že máte velmi pečlivý přístup a nenatočíte něco, co jste zkoušel 3x v životě. Ale chci se zeptat na péči o sýr v lednici. Setkal jsem se vícekrát s problémem, že sýr "oslizl" namíst toho aby na povrchu oschnul. V lednici bohužel nemám ventilátor, a trochu očekávám, že to bude spojené s tím, že se prostě syrovátka neopařuje a naopak na povrchu vysrážená / odkapávající udělá na sýru "rozmočenou" krustu, která problém působí. Ale i tak se ptám na Vaši zkušenost, jelikož třeba máte taky nějaký test v lednici bez ofuku. (Sýr mám na dřevěných dřívkách a pravidelně otáčím. Stejně jako Vy jsem ho obalil v soli. Chuťově je výsledek senzační, jen ta doba uchování se mi nějak nedaří. Po 2 týdnech narazím na to, co píšu.) Díky

You look tired. Good video. One little trick I use when making butter is to whip heavy cream, let it fall, and ball it up in cloth. I use an old t-shirt because it is fine enough to let the whey out but keeps the butter in. It beats shaking a jar for 10 minutes.

you can use cow's milk, but it wont be chevre. It'll be a type of soft cheese - and I'm sure quite delicious.

I'm pregnant AND breastfeeding my 8 month old. I'm halfway through making the chevre according to your recipe and now researching all the concerns... :-/ Now if I finish making this, but only consume it after heating it up (ex stuffed goat cheese peppers in the oven, cook it in an omlette) would that kill off most of the potential bad organisms? I'm finding plenty of pasteurized goat cheese recipes online and will try another next time I milk the goat.

I have a farm of about 18 acres and we have our own dairy business but which involves mostly cow and buffalo milk and milk products. We also have 5 goats at the moment and I was thinking of making goat's cheese on a commercial level. 1st is it commercially viable project? 2. I had the problem. I left mine in the oven over night and it actually worked fine, but it did take longer than 12 hours..
