I think it will eventually become clear that no plastic is safe, but corporate capitalism is still winning, so it's still ubiquitous. Also, if you want to work in a restaurant, there is no other option...and young people think they're invincible - or just don't give af, so there's that... ;)

I was excited about this, but there wasn’t much substance to the “best uses” part of the video and half the video was talking about the tip, which was a drink. I’d like to see how these are used to prep at home and how a prepped fridge looks for a family, a couple, and for a single person. That would be really helpful with tips from chefs to make it possible.

Discovered deli containers a few years ago and my pantry and freezer are full of them. Not all are the same however so be sure and get a good quality rather than the ones that are super thin plastic and easily crack. The good ones last for multiple uses.

The bottoms are dish machine washable (for a while, at least) … but I hand wash the tops. Some brands are more freezer sturdy than others. Sometimes I’ll make a stew, stock or soup - freeze it in a deli container then eject the frozen product into a vacuum bag and seal. I use the 16s for making biga/poolish and then doing the next day mix with hydration products. One thing you dont have - the 4oz deli’s … I use them for spice storage and transporting lunch toppings like fish oil, onions, garlic, salad dressing, fried shallots, Maldron salt etc that you will use for lunch - but dont want to pre-mix in the morning. The 4s & 8s are good for mis en place (for the home chef).

1. All those guys like Matt, I'm convinced they're all secret agents whose cover is "chef" and they vanish when their mission is over. Very useful cover anywhere in the world. 2. Biggest deal for me with these are the standardization; not only less storage space taken, but also standardized stacks in the reefer/cooler separated by cardboard sheets works wonders for organization and stability 3. That drink sounds good, I'll make one

I use plastic containers to measure when I am cutting vegetables. I can fill up a pint container with onions, for instance and then move on to a half-pint (1 cup) for carrots, and so on. The vegetables stay in the containers until I need them,

I don’t get this need people that have never worked a day in a restaurant have to cosplay as a “chef” in their own home. You want to accurately live the “chef” life? Be on your feet for 8+ hours without a bite of food, be underpaid, have no time or energy for a social life, have everyone believe you’re a burnout, suffer mental illness and be an alcoholic. But yeah sure, you watched The Bear and drink out of a deli container at home, “chef”.
