My grandmother was a huge jam maker. She would bake some loaves of bread and every kid got some bread and a small bowl of foam. It was heaven ❤🍓

Love your video! I can read but I am also a see it hear it person and appreciate your videos so much. I am 81 years old and I don't know anyone who does food preservation! I think the day is coming when younger people will wish they had some of these skills!

I grew you canning, I have not canned much since I married. We have celebrated out 38th Anniversary. The past several years i have only canned tomatoes and peaches.. I have so much more to learn. OH by the way I just subscribed, I appreciate you and your efforts and knowledge! Thank You. OH by the way I use “for Jars”. Canning goods!

That really was everything strawberry! Yum! I've never thought of making strawberry syrup from the tops, so thank you for sharing that. Great to see Phil up and around too with the best recipe to use that strawberry syrup!!!!

I just discovered blending strawberries for jam. The grandkids were always complaining about all the fruit floating to the top. Even shaking after the jars sealed but we’re still liquid. Blending makes a wonderful jam!

Just a note: make sure you use a heavy bottom pot for strawberry jam. You don’t want your jam scorching. This happened to me but I was still able to use it…I just avoided scraping the bottom of the pot. Lost a bit of jam, but it still worked.

I was gifted 2 flats of locally grown strawberries from my husband's boss, these recipes are going to come in handy! Lol! Just unearthed 4 boxes of Pamonas for the jam making! Cant wait to try it out!

im knee deep in them right now so far we did strawberry jam strawberry pie filling frozen plain frozen with sugar and strawberry rhubarb pie filling today im doing strawberry shortcakes and that will round out my strawberry season we are good till next june now one nice thing about berries they keep on giving every couple years i throw a few new plants i never stop getting berries then

I made strawberry jam, but ran the puree though a fine mesh strainer, twice, to remove as many seeds as possible. My father in-law can't have produce with small seeds, because of a health condition he handed down to his daughter and one son, thankfully, not my husband! It turned out great, and I used low sugar pectin, and organic cane sugar, so I feel it's better for those eating it. I made cranberry/jalapeno jam, using a can of whole berry cranberry sauce, cranberry juice, and about 5 jalapeno slices from a jar. I did the same thing, using canned peaches and jalapeno slices. They both made delicious spiced jams, to eat on crackers, with green onion and chive cream cheese. It makes delicious treats for watching TV with my husband, or to set out for family gatherings.

I'd like to learn that too. I've actually never heard of strawberry pie before. Although I have heard of strawberry-rhubarb pie, I've never eaten any.

2028 ft elevation. canned strawberries for 35 min in my steam canner. I left at least 1 1/4 " of space. I sliced my strawberries, blanched them like you did. only have of my jars stayed sealed. I had only a bit of overflow but they are all at the top of the jars. Lots of bubbles in the jars that stayed seal and yes, I used my poker...LOL. Haha, 6 bottle of strawberry filling...two eaten by the guys already...just made crisps. Lazy me but it's pie day this weekend(the unsealed ones are in the fridge)

Your recipe is almost identical to my family recipe, but I never thought about canning the filling! The difference is we also add (for 1 pie) a couple of heaping tablespoons of strawberry jello for extra yummy flavor and color. I wonder if that could be used in your recipe? Thanks for the ideas!

I did a bunch of syrups using 1/2 of the recommended Pamoma's pectin for a jam recipe. It worked out great! It was low sugar and just as sweet as I wanted it while still having a thickness to it.

Hey Leisa! Thanks for this great video!! There is NOTHING like fresh farm grown Michigan Strawberries. Ours are the best. Made 23 pints of Freezer Jam yesterday (husband thinks he would die if we had store bought. Only wants strawberry freezer jam. If we divorced, he would fight for custody of the jam. Today is strawberry pie filling and strawberry sauce day. Thanks for the idea for the syrup. I've got 24 quarts all together, so I can make a ton of the syrup!

Wished I had seen this a few weeks ago. I dehydrated my strawberries! (Which I love for snacking) but I wasted the tops!!! Now I want a redo ! And a steam canner!

Pie filling - time 1 = alot of anxiety about the right time etc, time 2 = confidence, I got this process, exceptions are when the filling burps out scalding hot filling on your skin and across the kitchen (no need to express the calamity associated with that) :) I do like making it and the absolute requirement is to be attentive during the cooking process. My mother-in-law makes a fresh strawberry pie that I bet could be adapted with home canned strawberry pie filling. In her recipe, you basically make a strawberry pie filling without as many strawberries (glaze), and then you put fresh strawberries in a pre-baked pie crust into which you have spread about 3 ounces of softened cream cheese, then pour the strawberry glaze over the strawberries and refrigerate until the pie sets up. Serve with whipped cream. It's delicious! I bet you could just use strawberry pie filling and do the rest the same. She makes a similar fresh blueberry pie - also delicious, and good for you because it's mostly raw blueberries.

I like too take all the cut off tops ,aka scraps ,throw them in a pot of dirt gentle cover with dirt. Keep moist for several weeks, eventually you will have tiny strawberry plants. Fyi It ,takes a while !

Did 4 qts this morning..had 5 but bottom blew outta one yuck!!. But they look so pretty & yummy! I see what ya mean by a fast process...MUST have everything at the ready for sure! LOL

Just finished my strawberry syrup! I ended up with 9 half pints (we did a LOT of berries). So happy to have this on my shelf. My youngest tried it and said "yay, now I don't have to go to IHOP anymore!" Thanks again

Hi again. I was just commenting on your "What's for dinner?" And now realize it's Thursday. So thanks for this lesson(s). I d love to try these things but I don't have the equipment. Only a new pressure canner, that I didn't grow any _____ to use it yet. I know. I know trust the process. I will. I think my freezer is packed. And I'm missing good sales because of nomore space. Not even for an ice cube tray. I suppose it's time for my big girl panties. Take care God bless ❤

I was gifted 16 QUARTS!! I made 17 half pints of low sugar jam, freeze dried 5 quarts and froze the rest. 🍓 I’ve had both strawberry and strawberry rhubarb pie! So good! I whiz my berries up in the blender too. 🤷‍♀️

Thank you for a great video! I had NO IDEA that strawberry syrup could be made from the stems!! The pie filling:WOW!! What a wonderful summer treat that will be!! I just made pineapple jalapeno preserves with canned pineapple and Mt. Olive sliced jalapenos! Best preserve I've ever made! Sweet heat! Spooned over baked boneless chicken thighs topped with coconut!

It’s not pressure in the steam canner, it’s temperature. I’ve done the same thing when talking about the steam canner - I do more pressure canning

I add a few drops of red food coloring to the gel mix before adding in the strawberries. Just makes them prettier. And I agree with the forjar lids

She is not even lying about those for jars lids either. I haven't had one failure with them. And they have a great towel as well. I still have strawberry pie filling. I don't have time to can right now. I need to can peaches, more beans, pinto, Lima, black bean, kidney bean, northern beans, and navy beans. Once I get back at it. I am gonna be busy.

I love everything strawberry! 🍓 I have never canned pie filling! But now, I think I have too! Strawberry and Raspberry jam are my absolute favorites and we go through those the most, so definitely making those jams this year! Oh, and I am definitely making strawberry jalapeño jam this year and strawberry syrup and strawberry tops vinegar!

Strawberry season is my favourite, never done pie filling - I am going to have to try that. I make jam, flash freeze & vacum seal for the freezer and strawberry simple syrup . Take Good Care 🥂

I just made some strawberry jam over the weekend. I didn't have any Forjars lids so I used what I had. 30% failure! I ordered more Forjars lids today. What a waste of time. Now I get to reprocess the jam that didn't seal.

Here in Manitoba Canada, I checked out how much u pick strawberries, $15.00 basket, $30.00 prepicked. I'm not sure of how much is in that basket. I guess I will find out, I have made some jam from store bought . Ohhh strawberry lemons is moonshine, wow. Crap I might have to make this too.

Nice Rack! :D lol I had to. The wooden rack after you took them out of the canner. Very nice. I never thought about pie filling being hard but I guess it could be. I've been on alert waiting for our local fields to be opening up!

My husband and I went to 3 local farm markets and none had any strawberries. We are in Ohio and the smoke from fires has drastically affected local strawberry yields. I'm half tempted to buy frozen just to be able to preserve some.

Will try canning strawberries, daughter loves them but hates the taste of them being frozen on trays then vacuum packed

This might be a dumb question but “can you steam can anything that you usually waterbath?”. I never waterbath so this a new concept to me. I have only used a pressure canner.

Could you freeze the tops until you have enough to make the syrup. Phil looks proud of his moonshine, happy face after the taste test. Great post on the different ways to use strawberries and continued canning of them.

I love strawberries!! I’ve always just eaten them fresh because I didn’t can or really bake. That has changed recently. Can you tell me, do you just bake the pie crust and then pour a jar of pie filling in the cooked crust?

Im new to using my new canner like you are using here. I have wondered how to put in jars that are not filled. I see you have some that are upside down. I was filling empty jars with water. So it's okay to add jars upside down to make up for not enough fruit filled jars in the canner? thank you so much for this video. Love all those gorgeous organic strawberries you got the best.
