That ice machine cleaner is phosphoric acid based. It also has citric acid in it(lemon acid). Both acids are food grade probably. You can see the difference in the copper tubing at 12:10

I took the Hoshi class, but all of our sites used the Manis. The teardown was always a gut check...red and black slime everywhere, to the point where I can no longer get ice in a glass when I am out to eat. Yuck. Tell you what Chris, I'll watch you do these, and I will try to stay up on the roof, lol.

@Len Miller It was probably 7 or 8 years ago, on Cabot Rd near the Oxford Valley Mall. It was a good class, but one thing I noticed in the design differences was the inability to fully visualize the evaporator because it was mounted off to the left, as opposed to be able to fully see the grid in the Mani machines. At that time, we serviced a casual dining chain which did NO maintenance, and everything was "fix on failure." They had a big warehouse of used equipment, and would swap out a machine rather than let us install something new and under warranty. They declared Ch 11 on Oct 7th, and I frankly do not miss working in a live kitchen environment.

@Len Miller I have about two years left, maybe a little more. None of the instructor jobs or factory rep offers provide enough money to bring me into their fold. It is as if they are like the third party corporates...no cash they want to spend, so they spend a little cash a hundred times over, because the average tech I follow up on had a previous job where he asked the question, "would you like fries with that?" I'm thinking the host for the class was Nordon.

Thank you!! Deep cleaning an ice machine is like a 6hr job for 1 guy, especially if you're like me who runs extra rinse cycles and dumps the first couple batches of ice...just to be sure. In my experience straight up industrial grade 100% vinegar is the best way to clean (soak) ice machine parts. It is super cheap: like $1.99/gallon on Grainger. It is way less hard on your skin than CLR or nickel safe, is food safe, and you can be very liberal with it. Nickel safe really sucks. Its unfortunate that you need to use it on the evaporator. I have found that cotton toilet brushes work the best for scrubbing down the ice machines. They're not that durable, so you'll go through a lot of them but they're JUST abrasive enough to knock off the crust without scratching up the plastic. Replacing the clear vinyl hoses is the only way, they cannot be cleaned.

Great video on cleaning ice machines. You mentioned using the correct cleaner, I was in a big chain restaurant the other day and the health dept closed dn there ice machines cuz someone was using the wrong cleaners and basically told them to hire a hvavr co to do a deep cleaning on them. The manager was pissed. Gave them a inspection rate of 80%. They have had higher ratings of 95 average. I was like oh no not good. It was hard for me to keep from ordering a drink, but I got a drink at a different store. Well I went off running my mouth. Great video and always a pleasure to support this channel.

I like how much attention is put on a thorough cleaning. Small details make a big difference. Sometimes, I have worked with leads that say: "leave it like that. It doesn't have to be perfect". I hate that attitude. Can't wait to be done with my apprenticeship to go on my own. Someone told me the opposite one day: "perfect is acceptable". I like that better. Thank you for your videos. They keep teaching me a lot. I will check for manufacturers' training. I don't know. Are they doing training with covid going on?

Good vid ! Only thing I would do differently is Buy insultubing for the Txv outlet lines. With only One or two wraps of foam tape lines will still sweat and that’s how the machines rust out in that location. Foam tape is only 1/8” thick. That location should have 3/4” wall insulation. 1/2” wall minimum if u cannot find 3/4 wall. It’s also a whole lot cheaper , looks nicer , works properly , and is easier to apply. Simply slide on before brazing. Like # 125.

Ice machines are the bane of my hvac career so far. I admit, i dont like working on them. I can and have, but given the chance....hard pass from me. You are a good tech Chris. Wish you and your company much success and growth. 2020 has sucked and been hard...especially in the restaurant world. I'll stick to chillers, towers, boilers, WSHP, RTU's, MUA and AHU. I have respect for restaurant hvac. Its a hard job and you are a better man than i.

Seeing most commercial Ice Machines working as an apprentice for a HVAC tech friend of ours, I’m always hesitant to ask for ice. Some of them aren’t maintained, they’re powered on in 2010 and not cleaned or serviced for a decade.

There was a time, not so long ago, when most of this process would have been unneeded because the refrigerant would just have been pumped out into the atmosphere. I suspect there are cut rate companies that still do that. Doing it right takes knowledge, skill, and the right tools.

You're a fountain of valuable information. Thank you for sharing. Circulating low ph (acidic) solutions through high ph (alkali ) coated systems will cause a neutralization as the deposits are dissolved which renders the low ph solution no longer effective. How fast this happens is a function of the ratio of the two.

^^^ This. It's not like there's chemical properties and components going into the aether from being opened. Also most antimicrobial plastics aren't just coated with a film it's usually all through the plastic. Scratches in the plastic still make areas where microbes can and will collect, but scraping the surface of the plastic doesn't get rid of the antimicrobial effect altogether

Ok, I have never seen that before. I have changed hundreds of TXVs in all makes of ice machines, but I have never seen a TXV self destruct like that. What was the build year of the machine? I'm thinking we need to keep and eye on those units.

Given the amount of water these things go through, a filter will only slow build-up down, not eliminate it. Water is an awesome solvent!

Mora Fermi I did not know that water softeners had actual filters in them, only a dispersed a sacrificial mineral to react with and precipitate ions. Perhaps I am right.

Many place do have filter softeners but they do not change them often enough if at all and build up occurs. Most filter softeners get changed when a tech finally come out to do a service which at my last company was once a year on ice machine cleanings.

Not practical. You can't filter calcium - you have to use a water softener to exchange something else for the calcium and the volume of water they use in those commercial machines would be cost prohibitive for the salt and sizing a unit big enough where it wouldn't be constantly regenerating.

@@DocNo27 I worked for a coffee chain where we had to have a water softener installed that was during a renovation as the lake we draw from for the city water supply is full of Limestone. IT first had to be installed for the self-cleaning ovens. This system was sized for 11 commercial coffee machines, 2 hot water towers 2 self cleaning ovens, a few sinks and toilets and a commercial water heater. Yes the system was bigger than what you would find in a typical home installation but it can be done and in the long run it saved a lot of technician visits as before the water softener we would typically have 1-2 machines go down for a period of what seemed like weekly and then afterwards it would be monthly. I remember when the softener broke down and immediately the repairs for Calcium related buildup in the tanks started occurring weekly again until the softener was fixed. The salt reservoir Took about 6 bags monthly which were the regular ones that could be purchased at home depot and only regenerated every few days.

They have Them & they help a lot. People usually just don’t care to spend the money on them. 4 this Hoshizaki it would require a 4 High flow filters/ ice machine @$200.00/filter that’s $800.00 every six months for water filters. People just don’t want to spend it. Usually. Thier are exceptions. A ice o matic or manitowoc is a lot cheaper to Filter. U can just use one i4000 filter / machine. Change every 6 months. $ 200.00 / 6 months is a lot easier to sell and it helps a lot !

Though I hated the replacement hot water tank. Almost any windy day because of the way the intake and exhaust pipes were angled, we would trip a safety, the air pressure switch. Since my father worked in the HVAC industry previously, I picked his brain as to what the issue could be given the situation. it was the increased pressure caused by the high winds and the pressure switch not sensing a Vacuum in the combustion chamber so it would go off on safety. I made a suggestion to my manager to get the plumber and just change the direction of the outlets of those pipes. I believe it was done as there were many windy days afterwards where we wouldn't lose the hot water tank.

Hoshizaki has great ice machines, however I will admit when I go to an ice machine service call, and I see a hoshi unit I call my service coordinator and tell her to clear my schedule because this is gonna take a while. 30 minute cycles gets very time consuming.

What do you mean by pulling a vacuum on a multi point… then you said you have the solenoid magnets.

Normally with solenoids closed you’d need to pull vacuum from multiple parts of the system to get it all evacuated, but by opening the solenoid valves with magnets it lets the vacuum be pulled from the whole system rather than having any parts of it isolated... from my comprehension - not experience.
