Except for Samsung, the other companies you mentioned at 1:14 are not manufacturers. They are just designers. Manufacturing of the chips designed by these companies is done by companies like Intel, Samsung and TSMC. And the companies that only design chips are called as fabless semiconductor companies.

Previously technology was limited by the amount of transistors that can fit on a chip, now it seems the limiting factor is temperature rise. It seems like the POP structure would need a fan since the SOC can not be heat sunk because the memory chip sits on top of it. As parts get smaller it gets harder to work with this stuff if you are a maker or hobbyist.

In a way, its combination of both. In SoC, different peripheral ICs or blocks like DSP, ADC are integrated into the same chip (much like a microcontroller) and yet it is very powerful like in terms of processing like a microprocessor.

In case of mobile phones, you generally find SoCs which are built around the microprocessor. For the specific application like Digital Camera chip in the digital camera, is the example of ASIC SoC. And applications where you want to customise the SoC and want to program some components of the SoC, then you can have FPGA SoC. I hope it will help you. Good luck.

Since last year, some brands like Lenovo and ASUS have launched the laptops based on the SoC. (Snapdragon 835 based SoC). And this year too ( probably by year end ), Snapdragon 845 based laptops will be launched. Up to Last year, the SoCs developed for the smartphone were not as powerful as the desktop processors. But as the technology is evolving, now these ARM processors are also getting powerful. (Of course, still, it can't be compared with the 7th or 8th generation i7 or even i5 processors, but for day to day task it will be good) The main reason now companies are considering to use these SoCs because of their low power consumption, Which gives the user a very good battery life. And for many users, it is a number one criteria.
