Roll out part of your dough on the baking sheet with parchment paper, then chill the rolled out dough for maybe 15 minutes- then cut out cookies while dough is chilled and on tray- peeling away the excess dough. *key is to chill cookie dough before you cut

Happy Christmas guys. Thank you for a wonderful year of vlogs😊. I did write in the comments last year when you made icing for your gingerbread house... best is "Royal" icing.. which is icing sugar and lemon juice only.. you don't need raw egg white. Royal icing is the "hardest".. you can make it really thick or runny.. it tastes best too because of the lemon juice. This is the traditional icing in Germany (where I live) for gingerbread houses.

I have found for gingerbread houses the absolutely best construction material is caramel, hot sugar does come with it own dangers but it sets so fast and holds so well. It very good for gingerbread house you are going to decorate with kids,You can prep the houses in advance (clearly be really careful with hot sugar and kids), then kids are really unlikely to get them to collapse whist the decoration it.

From a Grandma who has baked many many cookies through the years…..roll your very well chilled dough sandwiched between 2 pieces of parchment. Remove the top sheet of parchment and cut the cookies out and should come right off. If the dough has softened too much, slide your parchment paper sandwich onto a baking sheet and refrigerate for 1/2 hour or so. No flour required, except to swish your cookie cutter in before cutting. And if you bake your cookies when they are very cold, they won’t spread as much or at all. ☀️☀️🎄🎄
