I really enjoy watching your videos. Your energy in the kitchen is contagious and your videos always make me want to run in the kitchen and bake. I’m currently in culinary school for pastry arts and was really starting to doubt my career choice. Then I happened to see one of your videos and your energy and enthusiasm in the kitchen has made me really think that I made the right decision about being a pastry chef. Thank you

I make a Cranberry Almond cake and I grate the almond paste it makes it easier to blend into the butter. And I like using Amaretto, I think it enhances the almond flavor. By the way what bowl do you use on your stand mixer? It does not look like any I have seen, I like the depth of it.

That is a great trick! Sadly I think KitchenAid discontinued this model. A few months ago I went in search of another metal bowl for my mixer and I couldn't find it anywhere. I also can't find the mixer anymore or the replacement parts. V upsetting. Looks like we have to do the 6qt professional (amzn.to/3vk0qXG) or down to a 5 or an 8qt, which has a hefty price tag.

I make a similar recipe for Bostock, but instead of rum i use almond extract for more almond flavor
