Wheat cakes have denser texture. Could try half wheat n half maida

I have tried other cakes substituting wheat flour for maida. It did turn out well. I had to add in a little more milk . Quantity of milk really depends on the wheat flour used. So by my experience, I would say experiment by substituting it, having some more milk in-hand and you can sprinkle milk as you go about mixing the batter. The point to stop is when the batter gets into a thick flowing consistency and not thin and runny.
