I really resonated with how you described dispatching you’re own meal before eating and the quote you gave was perfect! I’ve been fishing for 15 years and dispatching fish to cook and eat myself and the feeling of putting in that work to get something that you see where it comes from, process the meat yourself, and cook it right there is how we should all be connected to our food and it’s how every single one of our ancestors originally got their food. The disconnect of going into a supermarket and buying a random cut of meat not wondering where it came from is all too normalized…

Glad you did the live lobster. I hunt for meet for my family. I understand your thoughts on dispatching a lobster properly and am impressed with that. Ethical hunting is no different and gives me appreciation for what how to properly hunt each season.

I completely understand what you said about the lobster and why you said it. I often find myself in that deliberately delusional position when I eat meat, because personally, I hate the thought of killing an animal to eat it but will quite happily chow down on a burger. Agree with your philosophy about knowing how meat gets to your plate. Toured a Delmarva Peninsula chicken plant as a journalist many years ago. The day didn’t turn me into a vegetarian but it was an experience I’m glad I had. Safe travels.

I used to line cook in NYC on the Michelin level in 2019, and one of my first ever tasks on the "fish station" was prepping lobster. I had to dispatch over 60 lobsters per day, and the method we used was the exact one you used here: knife straight to the head and cut down

Loved your comments about the lobster… this is a very important concept that needs to be echoed. It is extremely important to remain conscious and be mindful of where meat comes from. Hunting or taking an animals life with your own hands is a powerful experience that forms a deep respect and appreciation for the animal. This spiritual connection to our food is lost in today’s world and we need to be reminded of this whenever we can.

Here in the northwest cook the lobster or crab the same. Put newspaper on your table and also steam large artichokes to eat with your sea food. With hot butter and mayonnaise. Feast! 👍🏻🇺🇸🌹🍺🍜

Love Bar Harbor, Maine. It is the coolest little town. We have been there 3 times on various road trips in New England. Another cool area is Pemaquid....they have a cool lighthouse and keepers home. Geddy's a good place to eat.

Watched the tide go out and the spit to the island appear. Brought home to my rock garden a rather large rock from the bar to add to others picked up on my travels around the U.S. Had a great breakfast in a local restaurant in Bar Harbor too. For a serious tide, go to the Bay of Fundy-tides thrtr can be as high as 42 feet. As to cooking your lobster, used to go deer hunting. Everything bagged we gutted in the field then took to the local processing plant. The meat came home in hermetically sealed packages frozen to 20 below. Never had to buy meat at the grocery store for the next 8 or 9 months. So, am firmly in touch with where food comes from, how it's processed, and how it gets to the table. We celebrated them every time they were part of one of our meals.
