Eh, he didn't invent carbonated ice cream, just the device they used. You can get carbonated ice cream via other methods, one popular method is to make the ice cream using dry ice.

I attended Alton's second 'concert' in Mesa, Arizona in 2014 and he demonstrated this there. It was a spectacular concert, filled with food demonstrations, musical breaks, (Yes, Alton also jams on the guitar!) and belching yeast sock puppets.

A little more hassle, but it works better than liquid nitrogen ice creme. Something I use to do at a place I worked at until HR said I couldn't do it anymore.

Liquid nitrogen and a Hobart at high speed. Just add the ice cream mix to the blender and pour in Liquid nitrogen until to you get to the hardness you want.. it's rich and creamy but no bubbles tho..
