The blue tongue to most predators is likely a i'm toxic bluff, but research has shown that under UV light the tongue is brighter still, so it may be more for deterring birds that see in UV, the was they display there tongue when threatened is in quick flashing while hissing (kinda like you flashing you phone flash in someone face while shouting at them, to make them step back), so this maybe a defensive method more for babies rather than adults, but if it works why stop using it. Like there's another skink called the Pink tongue skink (similar to Blue tongues but smaller, slimmer and more arboreal) that when is young it has a blue tongue, like the Blue tongue skink but as the Pink tongue skink matures it tongue turns pink.
