@ Yeah. We struggle with a having a system/tool to capture all issues and retro problems. In order to create a living document, do we document on Jira or confluence?? How and why?

Have you encountered team members who are resistant to daily stand-ups and feel that they are a waste of time?

Absolutely, on projects of my own, I've had team members who feel like stand-ups are a waste of time. I've found that by having conversations with them separately and the value it can bring, helps remove some of the resistance. Also, having the buy-in of Leadership/Management and/or the support of another more Senior Team Member greatly helps! I've found from personal experience that the words from someone else who sees value in it (could be another Engineer/Developer/Tester/Leader), can greatly sway the influence of others

As a dev I have to say that daily standups are an enormous waste of time. A dev loses 40 to 60 minutes of focused work and gains nothing meaningful. Maybe a standup would be less harmful if it was the last thing you do in the day.
