The neat thing about the time my shift starts - I get most of the day time stuff, and my own of course later in the night. Not exactly worried or rushing to finish all this. Why? Because it’s slow. So when all these morning / afternoon dishes are done, I’ll probably be able to chill and do some cleaning.

Do you take care of the clean dishes as well?

Yes, if I don’t have a partner. I use a large cart to take all the dishes to the line cooks, or they will start yelling for plates.
