Amla squash with organic jaggery sounds like a delicious and healthy drink! Here's some information about it:
Benefits:
Amla, also known as Indian gooseberry, is a rich source of Vitamin C and antioxidants, which can boost your immune system and overall health.
Organic jaggery is an unrefined sweetener derived from sugarcane juice. It contains minerals and nutrients not found in refined sugar, making it a healthier choice.
There are two main approaches to making Amla Squash: with or without pre-extracted juice. Here are recipes for both methods, using organic jaggery:
Method 1: Using Whole Amla
This method involves boiling and grinding the amla fruit.
Ingredients:
250 gms Amla (Indian Gooseberry)
500 gms Organic Jaggery (grated)
250 ml Water
1/2 tsp Roasted Cumin Seed powder (optional)
1/4 tsp Black Pepper Powder (optional)
1/4 tsp Black Salt (optional)
Instructions:
Wash and dry the amla. Prick them with a fork.
Boil the amla in water until soft. You can pressure cook them for quicker results.
Let the amla cool completely.
Once cool, remove the seeds and grind the flesh into a smooth paste with a little water.
In a large vessel, add the grated organic jaggery and 250 ml of water. Heat it on medium flame until the jaggery dissolves completely.
Strain the amla pulp through a sieve to remove any remaining fibers.
Add the amla juice to the jaggery syrup.
Bring the mixture to a boil and then simmer for 10-15 minutes, or until it thickens slightly. The consistency should be like slightly thick syrup.
If using, add the roasted cumin seed powder, black pepper powder, and black salt. Mix well.
Turn off the heat and let the squash cool completely.
Sterilize glass bottles by boiling them for 10 minutes.
Once cool, fill the sterilized bottles with the amla squash.
Store in the refrigerator.
Method 2: Using Amla Juice
This method is quicker and requires pre-made amla juice. You can find amla juice at some grocery stores or health food stores.
Ingredients:
250 ml Amla Juice
375 gms Organic Jaggery (grated)
375 ml Water
1/2 tsp Lemon Juice (optional)
1/4 tsp Ginger Juice (optional)
Pinch of Cardamom Powder (optional)
Instructions:
In a large vessel, combine the grated organic jaggery and water. Heat it on medium flame until the jaggery dissolves completely.
Add the amla juice, lemon juice (if using), ginger juice (if using), and cardamom powder (if using).
Bring the mixture to a boil and then simmer for 10-15 minutes, or until it thickens slightly.
Turn off the heat and let the squash cool completely.
Sterilize glass bottles by boiling them for 10 minutes.
Once cool, fill the sterilized bottles with the amla squash.
Store in the refrigerator.
Tips:
You can adjust the amount of jaggery to your taste preference.
Both methods require the squash to be stored in the refrigerator. It will typically last for several months.
When serving, dilute the amla squash with water to your desired taste. A typical ratio is 1 part squash to 3-4 parts water.
