I believe there are few who haven't stood as children in front of a pastry shop, craving the goodies in the display. Amandina, along with other pastries, were trophies in those displays. Today, I have brought this cake as close as possible to everyone's table, even for those who are gluten intolerant! As beautiful as it is tasty. Ingredients:
Cake Base:
4 eggs
140 g gluten-free flour Mix C Patisserie Schar
160 g sugar
15 g cocoa
1/2 teaspoon baking powder
2 tablespoons water
2 tablespoons oil
2 packets of vanilla sugar
a pinch of salt
Cream:
300 g cream for whipping (30% fat)
300 g dark chocolate (52% cocoa)
50 g butter (80% fat)
1 tablespoon rum essence
Syrup:
300 ml water
100 g sugar
1 tablespoon rum essence
Glaze:
100 g dark chocolate (52% cocoa)
100 g cream for whipping (30% fat)
