amateur baker makes Claire Saffitz' Confetti Cake from Dessert Person! (underwhelming?)

hello hello! today, i attempted to bake our queen Claire Saffitz' Confetti Cake from Dessert Person for my husband's birthday. i think this makes a perfect birthday cake, although she also has a dif recipe for that as well! i think it's literally called "the perfect birthday cake" lmao. maybe shoulda done that one..
i definitely didn't have as many pitfalls making this as i did with the croissants of course. buttt, i don't think i executed this cake 100% correctly either. let me know in the comments what i could have done better : )

If you decide to bake it again ( or any other cake for that matter) put another pan filled with water and vinegar on the bottom shelf of the oven , it'll make the cake bake more evenly so it doesn't burn !

Loved watching this! I also want to try baking Claire's funfetti cake recipe. It looks delicious!! I would assume your large cakes got so dark because you put the cakes at the top of the oven (close to the heating coils) instead of in the middle of the oven, maybe??

i gotta say - claire's recipes aren't ones where you can sub things here and there. they aren't super forgiving. so i think subbing the cake flour for AP was a mistake. there is a huge difference between them structurally. AP has a lot more protein and gluten content so it probably takes more wet ingredients as well. you may have mixed it a bit too much also. i actually read to create cake flour from AP you can add a certain quantity of cornstarch to lighten it up. also same with the pans etc. i've found from doing a lot of recipes including hers that you gotta follow them by the book because they are so complex. also maybe try getting an oven thermometer to check and see if yours runs hot?

i totally agree. i think it was a combo of the springform pan and the cake flour that messed it up!! i need to try it again. i also need to buy something other than springform because for some reason that’s all i have!

if you make this again you could try and make one big layer and cut it into thirds but idk if that would work

I think it wouldn’t work because one layer is already massive so the cake pan won’t be tall enough. You could easily overcook the outside and the inside might still be raw.

They burned fast because they set on top in your oven. Maybe put them lower in the middle next time for even bake🙂 but it looks delish anyway🥰
