The Bamboo!!

This one is my take on the traditional Thai dessert mango sticky rice.
It’s composed with a caramelized puff rice crunchy layer, a passion fruit and coconut rice pudding, a light coconut mousse and a vanilla and mango compote.
All the bamboos are crafted out of 100% white chocolate.

There is actually a grade of bean they hold back and is very difficult for the public to get hold of because it is reserved for people like Amaury and other extremely high profile, high-end restaurants. Or, at least that was true 15ish years ago, and I cannot imagine why it would have changed.
