The Perfume Bottle!

A lot of thought and details went into this Rosée Champagne & Strawberry Dessert! 🎀
It is composed with a bubbly champagne jelly, a fresh strawberry compote, a strawberry whipped ganache, a crunchy sable breton base. In the pump are hidden some rose pralines (pink caramelized almonds) and the cords are made from champagne marshmallow.

Man, the amount of artistic skill and mathematical/scientific understanding needed to make these just blows my mind every time. Like you never skimp on the details; you try to get it as close as possible using food that's delicious to eat and gorgeous to look at. I really admire your hard work and love for your craft. I KNOW......not only is this man a top notch pastry chef, he's a master of mechanical engineering. He has to think up every single part as an engineer would have to do when drawing up blueprints, and then also BUILDING the items. EXQUISITE WORK. You Sir, are a Master of your Craft. I watch in awe. My father and grandfather were draftsman, who designed machines for the auto industries and more. I remember sitting at their drafting boards, trying to draw and do what they did. Mechanical Engineering ran through our family genetically, and many of us could simply "see" in our heads, solutions to problems. Mainly, if something needed to be fixed, or if something new had to be created. We can just "see" the whole design, then work backwards deconstructing what we saw. It's like FUN to us, because it comes naturally. So, yes, I am just in awe of what you're doing. Thank you for sharing it with us.

One Thing amazed me about the tv show. It was a peaceful and educating environment without resentment, revenge attitude and nasty competition. It was a show full of lessons and personal growth. Loved it. Please if you have the time to do more. Just do. Really enjoyed watching it. Especially when you were happy for the contestants when they reached the set goals.

Right? I’ve always been amazed by realistic looking cakes, but the cake artists never focus on taste, and they usually just carve everything out of chocolate or fondant. His are incredibly complex, each piece carefully crafted out of something different, with rich and complimentary flavours, uniquely and precisely thought out. His cakes aren’t just good looking cakes that are dry and made out of mouldable chocolate or fondant. They are both culinary and visual works of art. It’s incredible. He always goes the extra mile and then some.

I watch these at least 4 times. First time, watch without blinking. Then read the description and watch again to identify ingredients and process in each stage. Third to appreciate the time and processes not shown, and fourth just to marvel at the man’s style, ingenuity and dexterity again. One day I’d love to taste an Amaury Guichon creation. But I’d spend an hour staring at it before I even picked up a spoon. 💕
