The Telephone!

This one is full of little techniques to create this retro telephone.
I wanted to work with an ingredient not very well known (Rhubarb) that I've paired with strawberry.
It is composed with a thin layer of crunchy sable, a delicious strawberry financier, a sous vide compote of rhubarb and strawberry, a strawberry mousse and topped with a crunchy streusel hidden in the handset.
The top part is crafted with a Ruby chocolate naturally pink!

y'know, I think one of my favourite things about these creations is the fact that they're actually edible, and made with quality ingredients. when I was a kid my mom would make a strawberry rhubarb crumble in the summer. so seeing the artistry and the delicious, real ingredients together made my day. I love rhubarb!

It's especially hard to do it yet still make it, you know, actually edible instead of the forsaken horrors of Fondant that most "actually a cake" gags end up as.

What’s great about these creations is the fact that they’re not like what most people make where it’s just mostly fondant with a sliver of cake in the very centre, but rather made up of a variety of ingredients that look extremely delicious. I legit get hungry watching him cut into his work at the end, unlike fondant creations, which look cool but I know I would essentially be eating mostly moldable sugar.

I have such mixed emotions. On one hand, it is artistic and amazing. The creativity and complexity is astounding! I'm very impressed by that. On the other hand, it's a rhubarb cake. The fondant work is neat, but it's an 8x8 rhubarb cake. Eliminate the useless phone, and it's a church potluck cake.

This is, with our a doubt, my favorite creation! Not because it’s the most complicated (though it certainly did have a lot of pieces lol), or the most exquisite, but because it hits so many childhood memories all at the same time.
