If you let that liquid from the coconut tree sit for a day and add this tree bark it ferments into an alcoholic beverage we call “tuba” in bisaya( dialect of Filipino) leave it for another day and it becomes vinegar, a really flavorful vinegar.

This is amazing. And to think this process has been handed down for 150 years. I would love to go work and learn it with them. Who knew every time I would see the blooms on the pal.s trees in California, that ON coconut trees is where the sugar was coming from. 😮 Not tapped like a maple tree. Very interesting and interesting people.

Malaysian also produce coconut sugar, the process was about the same, the only different is without blending process, the end result of the sugar was in dark brown and a little semi transparent like candy.

I'm wondering if there's a difference in the cooking temperatures for the sugars. I'm trying the dark sugar now. I like it, but I wonder the sweetness of the lighter.

It is available in Mangaluru. My mother was a coconut and palm sugar vendor who used to go to various markets to sell it. If you have friends from Mangalore or a Mangalorean shop in your neighborhood you will surely get it.

The one i saw in Maldives looks very different. Same heavy consistency but Dark brown like honey. It was called rihaakuru I think. Its such a coincidence am making boiled fish n really wished I had rihaakuru then I saw this video 😊

Rihakuru is fish paste made as a byproduct in tuna fish processing to maldivefish/maasi. This is concentrated coconut palm sap extracted from its inflorescence called coconut jaggery, when prepared to a lighters consistency then it is coconut honey.

Don't worry.We have many coconut trees for coconut milk and fresh young coconut. Currently, fewer people make sugar from coconut flowers because this job requires 100% manual labor and is about to become a lost occupation.
