This French man has built quite a life for himself, even learning Japanese. I admire him very much, and the shot of the croissant at the end was incredible. I want to eat everything he made.

I wish we had the old style bakeries just like this where I live. The smell of fresh baked bread is magnanimous compared to any of the more traditional factory style companies we have today. It was an honor to watch this true craftsmanship unfold from beginning to end. Thank you kind sir!

Not only is the baker hardworking up at 1 am to prepare dough at 2 am, he is very systematic and can speak Japanese! He is a motivation for us to learn Japanese. I studied French and German, I know how hard language learning is. Hats off to him. Bonne Chance!

He does it for a living. I wasn’t in the same league as this guy but I once worked in a pizzeria/bakery and we worked 250 lbs of dough per day and after a while, you don’t even think about it because it’s so routine.

This guy knows so many different varieties of things to bake. Unless you have the passion for it you will not be able to acquire, create and make all these different breads, pastries etc. U have to have the heart for it and this guy has it. Salute to him. Most bakeries in Japan are like this, 50 different varieties of bread. Here he’s making many many Japanese style bread. We call them Kashi-pan, kashi means snack in Japanese and pan is bread. He’s making loads of those plus some loaves of bread.

Изделия из муки в/с очень вредны! Они выводят из организма кальций! Полезен ржаной хлеб с отрубями! А также возникает диабет по второму типу! Мука высшего сорта имеет очень высокий гликемический индекс!

In France every bakery which brand "Boulangerie" do the same work, and do a second batch afternoon. But some shop do not have "Boulangerie" sign, but "Paul" or some bread name.. It means bread is not made in the office (but may be cooked in the oven), it's bread made in factory (cheaper cost). Due to the laws, only shops who made and cook bread in the office can have "Boulangerie" sign. I'll tell you if by chance you go to France one day. Finally in France, even industrial bread is better than the bread that I could find in other countries. Except in Luxembourg, there are shops that make very good bread. "Bagette au froment" is the best.

@@jagababa No, it's just a matter of preparing the dough and leaving it for a few hours (at room temperature) to rise. You may confuse it with sourdough (fr: levain), which is used as yeast in the dough. it indeed requires several days of preparation, similar to your explanation. But for that, traditional baker just keep a portion of dough. But for that a traditional baker simply keeps part of the dough that he will integrate into the one he will prepare the next day, and so on. Sourdough is simply fermented dough. It is a principle similar to that of the Hermann cake recipe.

This was my life for 7 years until March 2020. I enjoyed and loved baking 🤍❤🤍 just me alone, baking from midnight till 5 am 😍 I was the pastry chef at a restaurant (that's now closed down because of covid-19). I specialized in cheesecakes despite me being lactose intolerant 🙃 I made all the breads, pastries, and desserts/cakes/ice cream.

I hope the restaurant reopen and get you back. I started to love baking during pandemic. Its stress reliever, I learned how to bake though it isn't perfect, I was able to make my first ever cake (that's honest confession) in my 38th year. I never had any baked cake since I was kid 😅. I made my self a black forest cake but I celebrated alone as I have no one during pandemic Salute to you and the baker in this video. It takes a lot of love to do this 😍

I love when he said, I went into bread baking because I like to eat bread. This reminds me of myself. Такой хлеб у меня во дворе печёт турок. Всё так же делает. Только у нас на дровах пекут хлеб. Мужчина работает чётко, мастерски, всё сам делает. Любо дорого смотреть. Мне интересно, он один работает, без помощников? Работать с тестом очень тяжёлый труд, нужно богатырское здоровье. Браво 👏 французу.

I have never seen a passionate Baker like this gentleman in the video. It is so amazing to the ❤️ he has for breads. The croissant that he had for breakfast is the proof. Only true bread lovers know that bread tastes even better when it is hot! I just loved watching this video! God bless you!

His incredible level of dedication is exceeded only by his masterful baking skills! I can't imagine this is a daily routine, on the other hand fresh baked goods don't really last more than a day or two so he must repeat it a least two or three days per week. Plus, presuming he remains in the shop to sell his wares after he completes his baking (beginning at 2:00 am) he must be working more than 16 hours/day! I guess you don't watch the clock if you're living your dream. Fascinating video!

This is likely his routine every day before the shop opens. Almost none of that will be the same on the second day except for perhaps the larger loaves. I worked in a bread factory for awhile - real respect for his skill and stamina. He makes it look easy.

This AMAZING dedicated Artisan is unbelievable in every regard is he not ! Just look at what he produces in under an hour, what most could not do in the entirety of the day. Absolutely brilliant, wholesome, yummy creations. What a world it would be if we all chose to be like this with whatever skills & gifts we have. Talk about inspirational, God bless him. It's unreal how much this guy makes. I'd be in heaven shopping there. I used to be a line cook and it's truly backbreaking work, which is why I took my butt back into corporate America. I can pay my bills now, but I still love creating beautiful breads and delicious food. More power to him. My hat and gloves are off to him! My hero.

My mother worked in a bakery when I was a child. She would work all night until 8am. She let me come and watch a couple times when I was on break from school. It's very hard but satisfying work that she enjoyed.

I never thought that the work of a craftsman who bake bread by hand would be so difficult. If there was such a store near my house, I would go buy it every day. We support French craftsmen who continue to bake bread in distant Japan.

Молодец пекарь! Это про него сказано дело мастера боится. Очень аккуратный в своём деле всю ночь работает один и везде поспевает со своей последовательностью! Он колдует над текстом как в сказке!мастер высшего класса!
