We planted beets, carrots, green beans, zucchini, peppers, one eggplant, and two tomato plants. Our harvest is small since most are in raised garden beds. I did plant a ground cherry also. In the ground we have a rhubarb, kale and herbs and flowers. I forgot about strawberries, so we have a small tub container of them. I planted pickling cucumbers and turnips for the Fall so far. Our problem is hot weather so we have to water in the morning before 10, or in the evening after 7pm. I love your garden areas. It's hard for me to get to all the parts of my yard that need watering. Stay well!

We always had alot of summer squash when I was growing up. My grandmother would fry it in butter and sugar or maple syrup and we ate it for breakfast with her biscuits or flap jack. It was always a good treat. Love and blessings family.

Esther and Carrie, what a nice video. Love seeing your garden produce so much. I do miss the big garden we always had out in Dora. I froze, dried, and canned enough for us to eat all winter. So glad you are getting enough to preserve. One thing I did with the over abundance of summer squash is dry it and powder it. Great for thickening soups and stews. Hope the garden continues to produce.

Potato Preserving: 1. Make mashed potatoes and quick freeze in ice cream scoop lumps. You can take out and warm on the stove top with a bit of liquid to serve later. 2. Carter at Grow and Preserve shows how to dry can potatoes. Just peel and can basically, so easy canning process. 3. Can into vegetable soup with your abundance of tomatoes and onion.

The sour cream on cucumber reminds me of a salad my friend from Germany would make. Just thinly sliced cucumbers tossed in sour cream, red wine vinegar and dill. Such a perfect summer salad!

I love dehydrated squash. It’s one of my favorite way to preserve zucchini. I use it in meatball /meatloaf, add to soups, sauces. I freeze some for baking and can some for adding to soups or for frying. I love the yellow squash browned in butter as a side. We have it several times a week. We stir fry and have over rice. August is our everything zucchini month with tomato sandwich lunches.

I am in Northeast Mississippi, and I am growing cucumbers, zucchini, yellow straightneck squash, cherry tomatoes, slicing tomatoes, yellow pear tomatoes, kale, Swiss chard, oregano, holy basil, rosemary, lemon balm, mint, sweet baby watermelons, green beans , sweet potatoes, basil, and celery. It was delightful to see Esther mature. She did such a great job sharing. I ma growing a lot of the same things as you family. My favorite things to grow are different varieties of tomatoes, beans, and peas. I'm thrilled that my elderberry bushes really took off and I maybe able to make syrup for the first time.

I am growing on a 3’ garden tower, not much room haha. I have jalapeños, cayenne peppers, cucumbers, beef steak tomatoes and onions, but only 2-3 plants of each. I usually kill all my plants 😭 so I’m thrilled to actually be getting some things this year, haha. Maybe I’ll continue to remember to water them.

You have some pretty vegetables this year. As I remember it isn’t hard to can tomatoes. Ester, your idea of planting the leftover plants really worked. I love to garden. It’s such a rewarding activity.

You may preserve canned tomatoes in salted water :). First you need to peel the skin, place them in the jar, pour boiled and salted and water and finally pasteurize about 20 minutes :). “Fresh” and delicious tomatoes ready for the winter :).

Ester I container garden. So I have peppers , cucumbers, bush beans and tomatoes. I live in the city and I work a lot. This way I don’t have to weed. I also have some flowers.

Hi.. Use a Harvest steam canner with a dial on the lid for water bath canning/ steam canning ..Great stock pot also.. USES FAR LESS WATER THAN CONVENTIONAL WATER BATH CANNING.. See what you think!! Lochness Scottish Highlands..

Don’t you have an underground storage area? My great uncle kept onions and potatoes in gunny sacks in what he called a “cave” (underground storage). I believe they lasted all winter. Oh, yeah-your root cellar! Can you put your potatoes and onions there?

Unfortunately, our root cellar is too warm and wet in the summer due to only being able to go down 3 feet (we hit bedrock). But we are able to use it through the winter.👍 We plan on building another patio cover off of our house that will add shade to the root cellar in the summer and perhaps allow us to store veggies in there longer.🙂

So far this month I have put up several flavors of canned chicken, canned mushrooms, pickled mushrooms…next is dry canning potatoes. I cut them into preferred size I soak in water with a couple Tablespoons of an acid (lemon juice or vinegar), rinse, soak in plain water, drain, and can. The soaking lowers the starch content. They’re great for frying, potato salad, soup, and if cooked a bit longer mashed potatoes 😃 Still on the to do list rhubarb syrup and pickled rhubarb. Favorite new item this year so far apple cider rhubarb apple sauce, so good and no need to add sugar! Delicious on pancakes too😎

WOW, what a harvest! Thank our Heavenly Father.🙏 I love to take Butternut Squash, cube it, add butter, brown sugar and cinnamon and bake it in the oven. Yummy! Esther, before you know it, you will be able to start doing the videos and all the cooking. From what I see, you are a fantastic cook. You learned like I did from watching my Mother. Carrie, when I was young, my Mother always water bathed her food, she didn't have a canner. I would love to try those Mexican Sour Gherkins. Thank you so much for sharing. I love canning. 22 jars of salsa, 14 jars of pasta sauce and lots of pickles. Blackberry and strawberry jam. Oh and red beets, bought some from a farmer. The bunnies ate all of mine. My sister shared cucumbers since she had so many.

When I harvest my onions...I really don't have a cool enough space for storage either...What I have found that works, is to chop them for recipes and freeze them in cup sized portions for soups, stews, and casseroles...they are ready to pull out of the freezer and add to veggie soup, chili, meatloaf, etc. You can do the same thing with peppers...no need to blanch either one.

Dry can your potatoes. Green beans are also easy to can. Make pesto with your basil. With your zucchini grate and freeze to make bread and/ orvslice into strips season with your spices bake and top with cheese

For the abundance of squash, look up squash "apple" crisp! Peeled and tossed with lemon and sweetener of choice, baked with an oaty crumble topping, you'll never be able to tell that it's not apples. Such a fun dish!

I’m in southern WI and have 8 4x8’ raised beds. I have harvested garlic, some tomatoes, sweet peppers, basil, oregano, parsley, cabbages, celery, & potatoes . Still waiting on beets, sweet potatoes, winter squash and leeks. Your melons look delicious!

Those tiny tomatoes might be Everglades or spoon tomatoes. I bought some everglade seeds last year and they reseeded themselves again this year. You’re doing a great job and you have some very capable helpers there! 🍅🍅🍅💕

If Esther enjoys canning, making zucchini/squash relish is super easy. We make dill relish and a zesty one. You can also make a great fermented relish with them as well. I'll shred squash and carrots and add dill and salt to ferment. Super yummy!

I planted 3 varieties of tomatoes and the sun gold cherry are so delicious, our absolute favorite. I also planted cucumbers and summer squash( not having much luck with the squash so far). I find the garden so peaceful 🌷. I love your videos and family- such a beautiful life. Blessings 💕

Hi guys. We live in zone 3 here in northern bc. Right now we are harvesting peas, beans cherry tomatoes and some cukes. I try to leave the beets and carrots in til our first frost which can be the end of august, although some years it’s later. The tomatoes and peppers haven’t turned red yet but I would imagine in a few weeks they will be. Thanks so much for your video. 🌷🇨🇦

So nice to see your family growing. I had the most luck this year with green beans, sugar baby watermelons, and cucumbers. Tomatoes were a bust this year except for black cherry. Corn didn’t make it either. I received a Greenstalk as a gift, and the whole thing is full of strawberry plants (which are slow to produce so far). I also planted a pollinator garden, and the butterflies are loving it!

You inspire me! I want to look into planting Fall seeds. I'm in zone 9 on the coast of CA. Unfortunately, we lost our cat, so the gophers have destroyed our tomatoes this year :( . Squash is growing well, but our various peppers are struggling, because it has been unseasonably cool this summer. I'm turning my attention to fall flowers, and to purchasing gopher baskets - lol

On our allotment we have berries galore (blackberries and raspberries, gooseberries which are still going) rhubarb, potatoes, salad leaves, tomatoes and some courgettes. Our sweet corn didn’t grow too well and our runner and green beans haven’t grown at all but such is the lot of a gardener. We also have a beautiful lavender bush and rosemary bush which as you brush past the smell is heavenly.

I love to see that your children are so into What's going on on your property, I especially love Esther's knowledge of the gardens. I have a very small indoor apartment garden. I'm mostly successful with scallions, garlic scapes, and lots of potato greens, but this year, the potato greens are struggling, along with potatoes, carrots, tomatoes, and lettuce. Since I started in 2018, I have planted more herbs now than before. It's been a large lesson and an exciting experience. I won't give up. I hope to remember all of the names as Esther. Im in the PNW and im growing lots of peppers, tomatoes and herbs. I had a spontaneous pumpkin pop up from my compost so we will see how that grows too.
