I have a question: could we have waited for the carrots to mature a little more? How can we identify if it is ready for harvest?

Yes we could have waited a little bit longer. I like to pick them throughout the growing season so I can eat them and not have a huge harvest at the end and have to figure out what to do with them. The longer you wait the more woody the carrots get themself. But knowing when to harvest is different for each variety. I usually go off how tall the carrot leaves are, if they are around 12 inches tall they should be good to pick, you can also check the top of the carrot root also to see if it is about and inch thick, but this can also change for each variety. Just curious to know where are you located out of? I am guessing somewhere in western Europe judging on soil type and climate! Could be wrong guess too!

I’m from the Midwest of the United States, the climate and soil could be similar to parts of that area.

i think a lot of those cucumbers were picked prematurely 😢

Not necessary, I believe you can pick them for whatever type of pickle you want. The only issue is when they start getting too big. That’s the joy of gardening you can kinda make the rules for yourself.
