Grouper and speckled trout have more worms then amberjack. Normally amberjack only has worms in the tail portion.

Try using 1 cup kosher salt, 1cup of dark brown to 1 gallon of water for your brine. Adding onion, garlic, black pepper and soy sauce is an excellent choice too. Use warm water to help dissolve the ingredients then add a few handfuls of ice cubes to quickly cool down water before adding fish. Brine for 8hrs. Rinse fish, Pat dry and place on wire rack in fridge for at least 2 hrs to get them tacky. Send me a lure as thanks. 😊

Hey heiko dry brine the fish next time mix 3:1 ratio like 3 cups of brown sugar with one cup salt and pack it on the fish it will draw out the moisture and create it’s own liquid it helps make the meat richer in my opinion. Other than that great as always!

Back in the days Atlantic and Iceland Cod came to our restaurant. We knew there was a possibility of same worms . Get a translucent cutting board and put that filet on it and one can see any worms easily. Make fast work of a clean filet. Worth the purchase. Amber Jack is awesome fried or how ever. Bet watching y'alls channel you could market them to the spooky amberjack critics. Be safe enjoyed.

When I was a kid I went fishing on a deep sea fishing boat out of Clearwater and caught a 43 pound AJ, My dad asked a old man on the boat how’s the best way to cook it, The old man said go get some cow shit and wrap it around the AJ and bake for 45 minutes on 450, and then throw the fish away and eat the shit, LMAO!!!

Apparently worms are fairly common even in some salt water fish but thoroughly cooking the fish eradicates any potential problems.

I once ordered skate (the ray we catch up north here bottom fishing) wing at a very fancy restaurant. Cut into one of the wings for the first bite and bunch of coagulated blood oozed out. Turns out the skate wing had a parasite (some sort of blood sucker) inside it. I just could not eat it then. Sent it back and ordered something else. I have found worms on other stuff like snapper. As long as you can see them and cut them out, they are fine. Not sure I would want to eat one cooked.
