you need to shake packaged ayran before opening. sometimes restaurants make their ayran fresh. ask for it if available. which means ACIK AYRAN.

The wheat type they use in Turkey is really different and very very tasty. You just cant copy that taste in other countries where they have "turkish bakeries".

The reason why food in Ankara is better is that Ankara is the least toursistic out of all the big cities and has a big working/middle class. so if a place serves subpar food, people just dont eat it. and the establishment cant survive.
