Tip if you soak your raw chips in water in the morning then at night drain them well and pat well dry with a towel, it removes some of the starch. Plus you need your batter to sit longer

Eating fish and chips with your fingers is fine if you are eating them while outdoors because you usually have no choice unless given a plastic or wooden fork, but sat at a table at home or in a café or restaurant, use a knife and fork.

Personally for me the only acceptable time to eat fish and chips with your fingers is out of the wrapper at the seaside. I don‘t know, maybe it‘s a class thing.

Why on earth did you boil your chips in water before putting them in oil? yeah you cut them too thin and forget the chip spice guys, just cut ur potato chips thick, make sure the oil is hot, put one chip in the pan and if it floats its hot enough and just put the rest in and once they brown, serve with vinegar and salt that's the way we do it.

another little tip, a small amount of tumeric in the batter mix, gives a better golden colour, you can also use yeast, which gives a light batter also, after you have let the mixture rest

Up north we have gravy with fish and chips, but its just a standard gravy. I just have it for over the chips and to go with the mushy peas. I don't have it with the fish. I'd have it with sausage, pie or pudding though. Onion gravy is more for a sausage and mash or toad in the hole

mate, little tip or for anyone thats has kids, you see the fish filltet, at the end its cut into a V shape, thats to remoce the bones, the slim section of that V notch, are great for fish bites, smaller bites for the kids, its easier than trying to fry it like that, as it can break easily

Curry sauce with fish n chips, is definitely the standard these days imo. Most supermarkets sell a bunch of curry sauce packs. The curry paste is the best, you get these red and orange tubs in most supermarket and you just make it with boiling water and you isntantly have chippy style curry sauce, would be interesting if someone sent you some. Curry ketchup is quite popular in ireland and germany too.

I worked in a chippy in Paisley (near Glasgow airport) for years and we done our fish and chips pretty similar although our chips weren’t triple fried x however the potatoes makes a huge difference to the texture x and for seasoning I always vinegared then salted otherwise the vinegar washed off the salt 😉 and I always trained my staff to do it that way xx your smashing these meals x so much so that I think I might get my oh to watch and try some xx much love poor Sav not getting to eat her meal hot lol xx defo need a tripod for the table x

Reason most salt first then vnegar is the salt sticks to the fat of the chips and the vinegar helps distribute some of it through to the bottom ones. Another good way is to make 'dry' vinegar. where you slowly add malt vinegar to a small bowl of salt until it can be formed like damp sand. Spread it out to dry and then bash it up to a fine grain. It gives a lovely salt and vinegar taste without making them soggy. It also works great on plain crisps too. Gives that old school S&V tatse when you'd just add malt vinegar to a bag of ready salted 😆

To much beer dude. For the batter I’ve got a chip shop my parents had one for years family tradition. Chip shops don’t use beer for batter. If you do use it it’s just a splash. Plus is you put splash vinegar in it instead beer will do the trick. Enjoy cooking and if you ever need recipes give me a shout.

We measure people in feet and inches. I have no idea what my height is in metres. We use pints and litres, we use both pounds and kilo. If I'm measuring something approximately like a rug or a drop on a curtain, or eyeballing something i use feet and inches, if i need acccuracy like a pain of glas or something, i use millimetres.
