Why dear?! Have you done PhD on pani puri?! Pani puri originated in varanasi and it had matar in it originally. I'm not saying potato doesn't taste good but the original recipe jas matar.

It's good to see someone explain even eating a simple Pani Puri. Astonishingly, whether in India , or in foreign countries in videos , in 99.99% of the videos , hardly anyone ever explains that there is a sweet sour chutney made from Tamarind or combination of Dates and Tamarind , which is a sweeter component of Pani Puri and many foreigners find it easier to have as compared to the Minty, spicier , green chutney which is more spicy and some foreigners find the kick too much. And because as Indians we like the spicier or hotter chutney better , we seldom explain the difference and mostly just provide the spicier chutney and not even explain the difference. This is true of all Chaat items also , bhel puri , Sev Puri etc. So , it's refreshing to see someone explain this si clearly. Indians we tend not to understand how to market our have patience to explain our own stuff properly 🙂. Good job with the explanation 🙂👍, to the Guests

In Bharat, we relate this exercise to ghadda mazdoori - donkey labour. You don't HV to do a fckg song n dance routine with the mashed potato & ragda fillings. The ragda peas shld be ideally steam cooked in a pressr cookr with 8-10 whistles till they soften , no mashing reqd. Add few masalas & black naturally flavoured salt , chat masala other condiments . Mashed Potato masala need not be a part of the dish ideally , unless U wanna add a side snack to this... Dah batata Puri ideally a semi dry n crunchy accompaniment to this. Most imp ingredient is the spicy panic which is the heart, brain , liver, kidneys, lungs & whthvu of this mind boggling simply dish.....a la khil Jaye bandh akal ka taala . Now don food grade silicone gloves. Start by brkg a thumb nail opening in the Puri , deftly flick a marble sized glob of ragda with thumb. Dip the Puri in the green n tamarind sauces consequtively. Finally dip in the spicy green panic & shove it into Ur kisser. The various flavours shld ideally explode in Ur oral cavity to get a sense of that "khul Jaye bandh akal ka taala" feeling 😂. Sprouted green moong can be added to the spicy water ( they float on top) to give U Ur protein dose n add a crunchy accompaniment to the Puri. When the spicy water starts dribbling down Ur chin tracing a fiery blazing path down Ur chin (taste wise) , U hv had the ultimate experience of this dish. Ideally when U hv this dish in Bharat, the vendor is so skilled n qwik with Ur Puri's that U hv one in the😢 mouth, one more waiting on Ur leaf woven Petri dish & the vendor waiting for U with one more in hand . The fried Puri's being thin n crispy , do not last long in this spicy water environment n burst open creating a mess of Ur dress 😂 , Ur dish & ultimately U with tears rolling down Ur cheeks due to the fiery nature of the dish , pani dribbling down Ur chin on to Ur shirt front. This is an ultimate example of an stressful environment & self education on STRESS handling. The vendor enjoys this more than U, the faster the Puri's disappear in Ur mouth the qwikr a fresh one appears in Ur dish & one more ready to eat Puri conjures in his hand. A la qwik gun Murugan Ur oral cavity feels n appears similar to a nuclear blast site😂😮😮😮 This video was a disappointment from that aspect. Alotof camaraderie was missing like we HV among friends while enjoying this dish on mumbai streets. 😂😂. In Kolkata, the dish is known as PUCCHKA due to the delicate nature of the Puri n tendency to burst open ....puchuk In north Bharat, it is known as GOL GUPPA , due to the circular shape of the Puri n shutup the consumer , by stuffing in his mouth 😂😮

The pani seems conspicuous by its absence Ideally itself be spicy & fiery in taste, free flowing like water in appearance with sprouted moong floating on Top.
