We season potato + Peas mix with Salt and Turmeric, to make the "Solid" mix, Also one can use Boondi if they want to, this is faster alternative with less preparation as one can simply bring readymade boondi, if one has to make both, then Potato + Peas mix is faster and less messy to make. Then we make the sweet Liquid component which is Tamrind paste for Sourness + Dates paste to bring sweet taste, in case Dates are not available, one can use Jaggery as alternative. The Spicy Liquid component is the last component which is Lot of Water + Pani puri masala + Chutney (Chili paste + Mint paste + Coriander leaves paste all mixed together) I suggest to make the pastes and keep them separate (Chili, Mint and coriander leaves) as that way one can change the taste of the Spicy liquid component as per their taste profile, some like less hot, so less chili, but more mint and coriander. The best part of pain puri is that ITS ONE HELL OF A CUSTOMISABLE SNACK..
